Recipe: Grilled Cheese with Apple & Tempeh Bacon

Ingredients

  • 1/2 medium Honeycrisp apple, thinly sliced
  • 1 tsp lemon juice
  • 1/2 tsp ground cinnamon
  • 2 slices whole grain bread
  • 3 slices tempeh bacon
  • 1 slice reduced-fat cheddar cheese
  • Non-stick cooking spray

Method

1. Toss apple slices in lemon juice and cinnamon. Set aside.

2. In a skillet sprayed with non-stick cooking spray, heat tempeh bacon until slightly crispy. Set aside.

3. Layer cheese, tempeh bacon, and apple slices on whole grain bread.

4. Place sandwich in a skillet sprayed with non-stick cooking spray over medium heat. Flip when face-down slice of bread is golden brown, approximately 4-5 minutes. When other slice of bread has reached the same color, remove from pan and serve.

Notes

*You may use any type of apple you wish in this recipe, but sweeter varieties work best.

*The addition of lemon juice is to prevent enzymatic browning when the apples are exposed to oxygen. I have not found this small amount of lemon juice to adversely affect the flavor, but if you prefer, you may use 1-2 tsp sugar water. If you plan on serving the sandwiches immediately, neither lemon juice nor sugar water is necessary.

  7. hai… im very interesting with this dish, because it made from tempeh. actually tempeh is origin food from my country Indonesia, Indonesia tempeh version made from fermented soybean, and we work it for mixxtured of any kind traditional food,such as soup, stir fry, pan fry, and forth. but I never had it on sandwich so I think this is very creative :)
