Recipe: Peanut Butter Barbecued Tofu

The inspiration for this recipe came from The Peanut Butter and Company Cookbook, specifically from its Peanut Butter Barbecue Chicken recipe. However, due to my reluctance to gather up all the ingredients for the homemade BBQ sauce and general hatred of cleaning the grill, I altered the recipe to fit my taste and schedule. Enjoy:

(Serves 1-2)

Ingredients:

6 oz. firm tofu, sliced and patted with a paper towel to remove excess moisture

2 T. BBQ sauce of choice (such as Annie’s, or my favorite, Whole Foods’ 365 brand)

1 T. The Heat Is On peanut butter, or regular smooth peanut butter

1/4 cup water

1. Pre-heat oven to 375 degrees.

2. With a hand blender, process the peanut butter BBQ sauce and water until smooth.

3. Pour half of the BBQ/peanut butter mixture into an oven-safe dish. Place tofu in the dish, and turn to coat. Pour remaining sauce over the tofu.

4. Cover with aluminum foil and bake for 15 minutes.

5. Remove aluminum foil, and bake for an additional 5-7 minutes.

Notes:

-While the recipe calls for Peanut Butter and Company’s The Heat Is On peanut butter, you can easily substitute normal smooth peanut butter, with a dash of hot sauce mixed in. Or, if you’d rather keep the heat factor to a minimum, just use peanut butter, sans any additional flavoring.

-If you’d like to have intense BBQ flavor, feel free to marinate the tofu in the sauce for an hour or so before baking.

  6. Girl I lovvvvvve a good PB slathered sauce. I’ve been making so many PB sauces lately for my eats. Anything with PB, some sesame oil, a little acid of some sort and blend…yeah, it’s good. Your tofu looks juicy and slurp-able :)

  7. Wow…. two of my favorite foods joined in perfect harmony! Barbecue sauce and PB?!?!? Genius!!!! :D I bet the sauce would be great on a baked sweet potato. I normally top mine in just bbq sauce but this would probably work better!!!

  16. I would have never thought of this. Usually I fry up tofu and use soy sauce that has been sprinkled with sesame seeds, chopped green onions and red pepper flakes!
