Recipe: Purple Fajitas

Purple Fajitas
(Serves 1)
Ingredients
- 1/3 cup red onion, sliced into half-moons
- 1 cup eggplant, cubed
- 1 tsp chili powder
- 1/2 tsp ground cumin
- 1/4 tsp red pepper flakes
- salt, to taste
- 1/2 cup black bean dip, either store-bought or homemade (see note)
- 2 oz avocado, sliced
- salsa of choice
- whole grain tortillas
Method
1. In a small skillet over medium heat, cook onions until softened and slightly transparent. Add eggplant and cover. Steam 2-3 minutes.
2. Add spices and salt and cook an additional 2-3 minutes.
3. Spread tortillas with black bean dip and fill eggplant mixture. Add desired toppings and enjoy!
Note:
-I used Ellie Krieger’s black bean dip recipe, but feel free to use your own or a healthy store-bought variety.

eggplant is SUCH a great idea to add to the dish! i have a boatload of egg planties in the garage that i miiight just have to incorporate into a dish like this
