Recipe: Tofu-Banana French Toast

After yesterday’s post, I’ve had several requests for the vegan French toast recipe I use. It was originally inspired by The Imus Ranch Cookbook, but I’ve tweaked it a bit to make it my own. Enjoy!

Tofu-Banana French Toast

(Serves 1)

Adapted from The Imus Ranch Cookbook

Ingredients:

-2 slices whole wheat bread

-3 oz silken tofu (such as Mori-Nu)

-0.5 medium banana

-0.25 c milk of choice

-0.5 t quality vanilla extract

-0.25 t cinnamon

-0.5 packet of stevia

Method

1. Coat a large skillet with non-stick spray and place over medium heat.

2. Meanwhile, combine all ingredients except bread with a hand blender or food processor. Mix until smooth and velvety.

3. Pour batter into a wide, shallow dish or plate. Coat bread evenly with the mixture. There will likely be leftover batter, which you may choose to eat straight as pudding:)

4. Place battered bread in skillet, and cook until both sides are browned evenly.

5. Top with your favorite fruits and nuts, such as bananas, berries, cherries, pomegranate seeds, almonds, walnuts, Sunbutter (as pictured above), even PB & J.

6. Eat with glee.

Notes:

-While I recommend using silken tofu for this recipe, practically any tofu will work. Just be sure to puree well if you choose to use a firmer variety.

-I know it’s a bit annoying that the recipe calls for only half of a banana—I usually use the other half as topping, so I don’t have a half banana hanging around my kitchen.

-I typically use unsweetened almond milk for the batter,but rice, soy, and hemp have all worked equally well.

-Because the batter is vegan (and extremely tasty), I often eat it straight as a pudding, or I’ll incorporate it into other dishes:

  6. OMG That looks so flippin good!!!!!!!!!!
    Too bad I cannot cheat on gluten (bread) or soy in that much quantity. I made a choc pudding that many people make with soy/tofu but I use avocado and although it sounds gross, it’s really good. Now I am wondering if I could use that for the batter. But the color would be so ugly LOL
    Anyway great job, this looks amazing and w/ SunBut on top. Be still my heart :)
