Recipe: Udon Noodle Salad with Creamy Cashew Sauce

Serves 1

Ingredients:

Salad

1.5 oz. udon noodles (dry)

1/2 cup chickpeas, cooked

1-2 cups assorted vegetables, chopped (I used celery and mushrooms)

Sauce

1 T creamy cashew butter

1 garlic clove, minced

juice of 1/2 small lime or lemon

2 t rice vinegar

2 T vegetable broth

2-3 T water

1/2 t red pepper flakes

salt, to taste

Cook udon noodles according to package instructions. Once cooked, drain, rinse with cold water, and mix with ice cubes to cool.

While the noodles are chilling, combine all the sauce ingredients in a small pan over medium heat. Stir continuously, until heated through and combined well. Add more water to achieve the desired consistency. Take sauce off the heat and let cool.

Once the noodles and sauce have cooled, combine with chickpeas and vegetables until the sauce is evenly distributed. Enjoy!

  1. That creamy cashew sauce is calling out to me! Wow, sounds awesome. Does it have a cheesy taste? Because I know the raw foodists make this “cheese” with cashews and such.

  5. ow! I love peanut sauce, I bet I’d be just as big of a fan of cashew sauce!! mmm.

    Yes! I buy papaya at my regular grocery store (I usually only buy it on sale because it can be expensive). It is a love it or hate it flavor and I love it! Give it a go.
