Recipe: Warm Sweet Potato-Cranberry Salad with White Beans and Walnuts

Serves 1

Ingredients

1 small shallot, thinly sliced

1 medium sweet potato, cut into bite-size pieces

1/2 cup cooked white beans (such as navy beans or Great Northern beans)

2/3 cup green beans, cut into 2 inch pieces

1 tsp poultry seasoning

2 tsp white wine vinegar

1 T whole grain mustard

salt and pepper, to taste

1/2 cup fresh cranberries

1-2 tsp agave nectar

2 T walnuts

1. Over medium heat, place sliced shallot in a non-stick pan. Once shallot is slightly translucent, add sweet potato and cover to steam the potatoes.

2. Meanwhile, place the cranberries in a small bowl and mix with agave nectar. Microwave for 1-2 minutes, until soft.

3. Once the sweet potato is fork tender (about 5 minutes after covering), add white beans, green beans, poultry seasoning, white wine vinegar, whole grain mustard, salt and pepper. Stir to combine, and cook for an additional 1-2 minutes.

4. Turn off the heat, and add cranberries. Distribute evenly, but don’t overmix–you don’t want the cranberries to stain the potatoes! Top with walnuts and serve.

Notes:

*I used white sweet potatoes for this recipe. Look for them at your local farmers’ market–they have an even sweeter taste than the orange variety!

*You could easily substitute dried cranberries for fresh. If you choose to do so, you can omit the agave nectar, as most dried cranberries are already sweetened.

*This salad could alternatively be served cold. Make a double batch for leftovers!
