Recipe: Whipped Vanilla-Almond Sweet Potatoes
Whipped Vanilla-Almond Sweet Potatoes
(Serves 1)
Ingredients
- 1 small sweet potato, cubed
- 2 T vanilla almond milk
- 1/2 t pure vanilla extract
- 1/2 t ground cinnamon
- 1 t fresh grated ginger
- 1 packet sweetener (e.g., maple syrup, stevia, etc.)
- 2 T almonds, chopped
Method
1. Fill a small saucepan with water and place over high heat until boiling. Add sweet potatoes, cover, and reduce heat. Once water has returned to a gentle boil, cook sweet potatoes for 5-6 more minutes, or until soft when poked with a fork.
2. Remove potatoes from water and place into a blender. Add all remaining ingredients except almonds and puree until smooth and fluffy.
3. Place sweet potato mixture on serving plate and top with chopped almonds.
Notes:
* I leave the peel on the sweet potatoes, as I enjoy the taste as well as the nutrients that it provides. For a smoother and fluffier texture, however, feel free to peel potatoes before boiling them.
* I used unsweetened vanilla almond milk, but any milk would work well in this recipe.
* The amount of liquid listed here is an estimate. Depending on the size and starchiness of your potato, you might need more or less milk.

What a yummy way to prepare sweet potatoes! I mostly eat them with tons of cinnamon but vanilla and almond sound like a special treat.
