Reminiscing with Queen
So I just finished watching American Idol, and one of the final songs that was performed was “We Are the Champions.” The song immediately transported me back to my senior year of high school, when I had two CDs playing continuously in my car: Greatest Hits of Queen and Greatest Hits of Journey. Apparently, I should have been born approximately two decades before my actual birthdate. Anyway, I ended up singing along with Adam and Kris at the top of my lungs, reminiscing on my days as a teenager. How about you? What songs “transport” you to a different era in your life?
Tuesday
Once again, due to my lack of afternoon snackage, I need a little something in addition to my smoothie last night:

half of a Holey Donut (Low Fat Cinnamon Streudel); banana; raw cashews

warm & melty icing shot

peach-blueberry-strawberry smoothie with soymilk, Berry HempShake, & Acai Apple granola
Wednesday
For my bowl of “Q” oats today, I tried yet another new food, in accordance with Katie‘s challenge. Today’s novel breakfast item was a quince. Once cooked with my oatmeal, this was a fabulous mix-in! It tastes a bit like a fusion of an apple and a pear, so the resultant bowl of oats was similar to apple pie. Be sure to cook quinces before consumption, however: due to their high tannin content, they are inedible when raw.

quince, pre-chop

"Q" Oats: quick-cooking oats, quince, cinnamon, rice milk, pecan butter, & vanilla agave nectar

I finally got the chance to satisfy my craving for a “meatloaf” (i.e., lentil loaf) sandwich, and it totally spawned a food fugue. FABULOUS. This recipe is so simple too; I might try adding some fun mix-ins next time I make it (Spicy Mexican Lentil Loaf, anyone?).

lentil loaf sandwich with organic ketchup; salad; honey cinnamon almonds; apple

love, in sandwich form

Before heading over to my sister’s house for some American Idol viewing, I grabbed a quick snack:

reduced-fat Colby Jack cheese stick; peanuts & dried fruit
When I came home, I made my favorite recipe from ED&BV: Cashew Ginger Tofu. For some reason, the sauce ended up a bit pasty this time, but its flavor was still spot-on.

Cashew Ginger Tofu, whole wheat couscous; veggies cooked in garlic & Bragg's; plain yogurt with Champagne mango

pasty but tasty

Check out what I got today:

Air Pegasus, pair #3
My new running shoes! This is my 3rd pair of Air Pegasus kicks–these shoes were made for my (very flat) feet. I received my 2nd pair this past Christmas. They had about 500 miles on them and were quite worn at the heels, so I decided it was time to retire them to only occasional use. Are you loyal to a certain brand or model of athletic shoes? What’s your favorite?
Alright, that’s all for this evening–be back soon, my dears!

I’m a Mizuno convert from Asics.. I’ve always thought Nike shoes were too narrow for my wide and flat feeet. But your eats look sooo delicious!

The lentil loaf looks fab!
I have an extreme admiration for alternative rock bands from the 90′s—Oasis, The Wallflowers, Matchbox 20. They always bring back to simpler days when I was younger.
But I’m always in the mood for any good 70′s tunes.
The lentil loaf looks tasty. I’ve been dying to make my own nut/bean loaf but I’ve yet to do it. I usually just stick to my tofu and tempeh…
I love the lentil loaf too! It is great with onions, spinach and carrots baked in too!
yesssssssssssss for new sneaks!!!!!!!! love them!!
I’ve been looking for a good lentil loaf recipe (made it once and it was pretty bland) — thanks for sharing this one!

My past 2 running shoes have been nikes with the pink sign! lovee them, and they support my supposed “weak ankles!”
That tofu recipe looks deliciousss, and how did ya like the holey donut??! the website says that the cinnamon strudel flavor is just like coffee cake, would you agree?
