Return of the Market

Every year around this time, I start to have visions of tomatoes, corn, and squash; I begin to dream about all the fresh summer veggies that will grace my plate in the upcoming summer months.

Gazpacho and corn on the cob are one step closer to no longer being figments of my imagination, as my local farmers’ market re-opens this Saturday. I’ve already done my research to see what’s in season this time of year (incidentally, broccoli is on the list!), and I am excited to see what the local farmers have to offer.

One of my classmates in the graduate program happens to be the manager of the farmers’ market, and she requested that a few of us attend the opening Saturday to provide nutritional guidance to any of the market’s patrons. I gladly volunteered—I mean, clearly I enjoy talking about vegetables, almost as much as I enjoy eating them :)

Do you visit your local farmers’ market? What types of produce do you look forward to eating every summer? I can’t wait for fresh blueberries and juicy tomatoes!

In the meantime, I’ve been satisfying myself with the usual veggie suspects—pumpkin and broccoli slaw…

For breakfast, I put together a pumpkin-banana protein shake with coconut butter. Seriously, this combination tastes like a milkshake. Delish.

Lunch was inspired by a recipe I spotted on Poor Girl Eats Well a few weeks ago. Her recipe includes dried cranberries and herbes de provence,two ingredients currently absent from my pantry stock. I improvised with dried apricots and dried thyme leaves, and I was pretty pleased with the end result—the crunch from the almonds definitely satisfied my love of texture and crunch!

Tonight’s evening meal was an Ellie recipe, Tabbouleh.

No tweaks this time!

This dish was brimming with fresh flavors, between the pungent red onion and bright lemon juice/zest. However, it was still missing a little something, so I ended up combining it with my own Lemon Ginger Hummus.

Before I go, I’d like to draw your attention to my new header (for those of you in Google Reader, click on over!). I am delighted with Zesty’s work, and I think my new tagline more accurately summarizes my current attitudes toward food.

  3. Some people think herbes de provence is a must, but I am not all that enamored with it. My grandmother bought me two bottles of it because she’s obsessed, but I don’t think it’s anything special – you can do without it!

    I love, love, looooooove the new look of Broccoli Hut! The header is so cute and professional!

  4. The new header came up and looks great–very fresh and clean-looking. Well done! Thought you’d like to know that I had gazpacho for dinner tonight–Dad made it last Sunday. It IS a taste of summer. Loved it!

  6. That is SO cool that you get to work at the farmers market! I love it! Can’t wait to read about your experiences. That wrap sounds totally unique- such a great idea. And your dinner plate makes me drool- reminds me I need to incorporate more hummus into my life ;)

  8. I like the concept of tabbouleh, but I worked with this Lebanese woman that would make it for us, and she used curly parsley, I guess that’s traditional, and I found it really difficult to enjoy.

    But this looks like regular ‘ol flat leave parsley, and that I can get around!!!

  9. I love the berries from the farmers market, especially the rasberries. The past few years I’ve grown my own cherry tomatoes, but this year’s spring has been quite delayed, so I’m not sure if that’s going to happen :( I guess I’ll have to start getting tomatoes from the farmers market too!
