Return to Alabama

As I mentioned last night, today marked a very special occasion in my mind, as it marked Seth’s arrival in Birmingham for the upcoming holiday. And how did we kick off Seth’s return to Alabama? Well, a return to the Alabama…Theatre, that is.

Yes, I just visited the Alabama Theatre on Saturday for our annual viewing of White Christmas, but my siblings (plus respective spouses), Seth, and I all returned to the Showplace of the South for a viewing of Home Alone. Even after all these years of watching the film over and over again, it never fails to make me laugh and heighten my Christmas spirit.

Rewind to 8AM: Breakfast

Flax really works wonders in thickening up oatmeal. This batch was almost pudding-like it was so thick and creamy.

For lunch, I whipped up a colorful salad.

Before heading to the theater, I baked up a fantastic butternut squash pizza. Recipe coming to the B-Hut soon!

Alright, I am desperately in need of a snack. Good night!

    BroccoliHut Reply:

The tofu is not as fancy as it sounds–I just marinated it in Annie’s Papaya-Poppyseed salad dressing.

  12. Hey Caroline,

What is your experience with eating soy and the effects on your thyroid? Does it affect your thyroid levels at all?

I’ve heard that it affects the absorption of thyroid medicine, and I am wondering if I should not be eating soy at all.

    Any advice?

    BroccoliHut Reply:

I’ve been concerned about the effects of soy on thyroid function too. However, after doing some research, it appears that as long as you take your medication at least 2-4 hours before consuming any soy, there shouldn’t be any side effects.
