Road Trippin’

Around this time last year, I had just met Treadmill Buddy, and I was heading home for Thanksgiving. This year, however, Treadmill Buddy and I are gearing up for a road trip to Massachusetts. Yep, Seth and I will be driving up north next week to spend the holiday with his family.

Considering my weak sense of direction and sub-par driving skills, Seth will be handling the driving, and I have been charged with supplying the food and entertainment. Nanette is all loaded up with tunes, and this weekend I’ll be in search of an audio book—that both of us will enjoy (I’m guessing Gone with the Wind is a no-go?).

As for the food, I’m thinking that peanut butter and jelly will be necessary, but otherwise I’m at a loss for ideas.

What snacks do you like to pack while traveling? Suggestions, please!!

I’m anxious to get the weekend started, so let’s get to the grub.

After months of experimentation, I think I have finally found the perfect protein pancake recipe. I used Susan’s Dairy-Free(ish) Protein Pancakes and was delighted with the results—perfectly fluffy and sweet. I added blueberries in the batter because, well, I can’t resist adding my own twist:)

For lunch, I put together a soup using leftover delicata squash and a black-bean couscous salad.

Dinner was Citrus Grilled Tofu plus another batch of Whipped Vanilla-Almond Sweet Potatoes. Recipes on the way…

  1. I love to snack on anything crunchy when I go on road trips. I think the texture and sound help keep me alert. My go-to snacks are carrot sticks, celery, Pop Chips, veggie chips, grapes and granola bars. Have fun on your trip!

  2. Fruit and veggies are always my first pick for road trips. I reccommend choosing sturdy fruits (like apples, bananas, and oranges) and crunchy veggies (like carrots and celery) that will both keep well and satisfy your munching tooth. I look forward to the recipe for the vanilla almond mashed sweet potatoes. You have me drooling already! Also, could you please post how you made your delicata squash soup? I never have leftover squash (whoops!), but I would love to try making it if I am able to restrain myself from eating the leftovers before they get there.

  3. Wow, I can’t wait to see the recipe for the sweet potatoes. That squash soup looks great too! Is it green-y because of the chives or is it always like that?

    I like freeze dried & fresh fruit, roasted edamame, and baked oatmeal bars for road trip snacks.

    I love crunchy things like carrots, celery, sugar snap pears, apples, cherry tomatoes, trail mix, etc.

  9. Have fun on the trip! I always pack homemade granola bars, trail mix (nuts, seeds, chocolate chips ;) ), fruit, carrot and celery sticks and usually a sandwich or two. Safe travels

  10. Looking forward to that sweet potato recipe! I pack a little of everything for road trips: sandwich, fruit, peanut butter, crackers….

  11. Thanksgiving with the parents!!! Have fun! I always pack lots of fruit, a couple almond butter sandwiches, and plenty of water and gum.

  12. Some ideas for snacks include: making your own trail mix (that way you can get the exact mix of dried fruit, nuts and seeds that you like), rice crackers with seaweed are good included in the mix too! I also like to fill the inside of a celery stick with peanut butter and raisins.
