Saucy Vegetable Masala Burgers

I developed this recipe for Tandoor Chef’s 30 Days of Burgers, using their vegan Vegetable Masala burgers.

Saucy Vegetable Masala Burgers

(Serves 1)

Ingredients

For the spicy peanut sauce:

  • 1.5 tablespoons natural creamy peanut butter
  • 1.5 tablespoons coconut milk
  • ½ teaspoon red curry paste
  • ½ teaspoon freshly grated ginger

For the cream sauce:

  • ¼ cup plain Greek yogurt
  • 2 tablespoons fresh mint, chopped
  • 1 teaspoon fresh lemon juice

For the burger:

  • 1 Tandoor Chef Vegetable Masala Patty
  • 1 whole wheat bun, toasted

Method

1. Combine peanut sauce ingredients in a small saucepan or skillet. Heat and stir until well combined. (Note: additional coconut milk may be necessary; add as much or as little until your desired consistency is achieved). Set aside.

2. In a small bowl, combine the cream sauce ingredients.

3. Lay bun flat and spread peanut sauce on one side and the cream sauce on the other. Place Vegetable Masala patty in between the two sides of the bun to assemble your sandwich. Enjoy!
