Savory Oats with Fried Egg and Avocado
Savory oats may be a hard concept to grasp at first—I mean, aren’t oats supposed to be enjoyed in a cinnamon-y, maple-y, sweet concoction? I, too, was a little intimidated by the idea when I first stumbled upon it in the food blog world. However, once I discovered the salty side of oats, I was hooked. Below is one of my favorite savory combinations. Enjoy!
Savory Oats with Fried Egg and Avocado
Serves 1
Ingredients
- 1/3 cup oat bran
- 1-1/2 cups water
- 1 oz reduced-fat cheddar cheese, chopped, shredded or crumbled
- 1/2 tsp chili powder (optional…but recommended)
- salt, to taste
- 1/4 cup chopped tomato
- 1 medium egg
- 1/2 small avocado, chopped
- handful of fresh cilantro, chopped
Method
1. In a saucepan over medium heat, combine oat bran and water and bring to a simmer.
2. Add cheese, chili powder (if using), and salt and stir well until cheese begins to melt into the oat bran mixture.
3. Meanwhile, heat a non-stick skillet over medium heat. Crack the egg into the pan and cook until the white is opaque, and the yolk is just set. Remove from heat and set aside.
4. Once oat bran has reached the thickness you desire, remove from heat and pour into serving bowl. Top with tomato, avocado, cilantro, and fried egg.
5. Bust that yolk!

Definitely worth a try! I love its smoother texture–I recommend Bob’s Red Mill brand.
mmmmmmmmmm! I love savory oats. I’ve only done with beans, hot sauce and veggies. This combo looks awesome
I still haven’t tried savory oats! I had a bad experience with them a while ago… I added too much hot sauce and it went straight into the trash. I definitely need to try again.
