Scoopin' Up Sweets

CIMG0792Today was all about scoopin’ up the sweets, which is never a bad thing. This afternoon, my sorority hosted its philanthropy event, “Scoop a Dish for Make a Wish.” Coldstone Creamery graciously donated several tubs of their delicious ice cream for the event, featuring four delicious flavors: Sweet Cream (brownies + sprinkles), Oreo Overload, Birthday Cake, and Chocolate Devotion (chocolate ice cream with chocolate chips, & brownies). The event was quite the success, and I really enjoyed having scooping duties–perhaps I should go work at a creamery? Here are a few pics from the afternoon:CIMG0793

Then, this evening, I scooped up some baked goodness with Allie. She scoped out a genius recipe for Butternut Squash Pecan Muffins, but we modified it a bit to make it vegan. See below for a pictorial documentary of our baking adventures:

I am enjoying one of these autumnal gems right now–for what they lack in beauty, they make up for in flavor. Can’t wait to try these in a breakfast parfait!

Aside from my sugar-centric activities today, I did manage to eat some more nutritious eats.

Friday

In preparation of another rushed morning, I cooked a small batch of oatmeal last night and stuck it in the fridge to solidify overnight. Chilled and cooked oats + seriously ripe melon=makings of the perfect Green Monster.

IMG_0986Lunch was another Peanut Butter and Company-inspired meal. This was “The Elvis”–grilled PB-banana-bacon sandwich. I subbed tempeh bacon for the regular bacon, and it was a salty-sweet masterpiece. Perhaps I should try “The Pregnant Lady” next? Hmm, not sure if even I could handle PB + pickles…

Before heading over the Allie’s place, I made a simple Caribbean Chickpea Salad, based on a recipe using tuna steaks from Clean Eating Magazine.

And now, I must bid you farewell indefinitely: I will be laptop-less again for the next few days (for the SAME reason as last time), so I am uncertain as to what my blogging schedule will be like. I am keeping my fingers crossed that I can work my blogging magic on the university computers!

  1. Oh, I’m so bummed our healthfood store didn’t have the Fakin’ Bacon today. I want to try that sandwich! And PB/pickles is actually really good…you should try it! Have a great weekend!

  3. The Elvis! BRILLIANT! Kinda wanna try it! :) He was an innovator in myrad ways, right?
    Here’s how to make chia gel: mix 1/4 cup chia seeds with 2 cups water and let it do the damn thing! I’ve kept it up to two weeks :) I’ll be watching to see if you try it!

  8. I love the idea of adding oats to the smoothie! Smoothies never hold me over since they lack whole grains..but adding oatmeal is perfect!

  9. Aww that’s so nice of Coldstone to do that. I don’t particularly like their ice cream, but sounds like a great cause and a fun time

    One of my favorites from the PB&Co. cookbook is the sandwich with white chocolate wonderful, apricot preserves, and slivered almonds

  11. What a great idea and it looks like you had fun too! I have never tried Coldstone ( I went in once and asked if they had any yogurt options and the answer was a firm no ) I bet there “real” stuff is great I just try not to eat real ice cream that much.

  20. I’m convinced that peanut butter will taste amazing with everything – even pickles!! Those muffins look fab. Anything with butternut squash is a winner in my books ;)

  21. I just bought that PB & Co. Cookbook. So far my favorite sammies are the pb + nutella and the one with the shredded coconut (I forget their names)

    thats so sweet of coldstone to provide their delicious ice cream (especially the b-day cake!!)
