Seth & Caroline’s Superbowl Tradition

Tonight I write to you from the couch, waiting for the next commercial break. Neither Seth nor I is interested in the game itself really—we look forward to it more for the creative advertisements and for the excuse to make lots of food.

If you’ll recall, last year we prepared a spread of homemade corn chips, guac, salsa, and refried beans. Ever a tradition-loving couple, we decided to whip up the exact same feast this year, with a few tweaks (scroll down to see the full deets!). We now sit happily, with stomachs full of guacamole and eyes fixed on the television screen:)

Before all the Superbowl festivities began, however, I had a pretty routine weekend.

Saturday

I’ve had this jar of Trader Joe’s Sunflower Butter sitting in my pantry for weeks—I had to wait to crack it open until I polished off my jar of the Maranatha version. After just one lick of this stuff, I can tell that the TJ’s version is going to become a routine purchase for me. Just the right amount of sweetness and a perfect degree of spreadability.

Yesterday afternoon, my craving for marinara-smothered spaghetti squash returned. Accordingly, I made a quick tomato sauce with onions, eggplant, and TVP, and lunch was served.

As promised, I finally got around to making Ellie’s Mushroom, Onion, and Basil Pizza last night.

My tweaks:

-Rather than using a pre-baked pizza crust, I used whole wheat dough from Trader Joe’s.

-I omitted the grated parmesan cheese, as I figured that there was plenty of mozzarella to cover the cheese quotient.

After preparing this recipe, I have re-kindled my passion for sun-dried tomatoes! I can’t wait to dream up ways to use the rest of the bag:)

Sunday

My broccoli intake of late has been uncharacteristically low. An omelet chock full of broc took care of that problem.

Lunch today was a modified BLT wrap, featuring my beloved tempeh bacon and tomato hummus.

As mentioned above, tonight’s meal was all about the guac…plus a few chips and salsa thrown in.

Alright, I am off to study/keep an eye out for good commercials!

  9. Hehe, I didn’t watch the game (sssh, don’t tell!); instead I jammed to Jason Mraz while prep cooking for my school week ahead. Let’s just say making hummus, and cutting carrots is a whole lot more fun than watching stinky football! Half-time Black eyed peas called my name, though!
