Seth’s Birthday Pie
Twenty-six years ago today, a very important person was born…
As I mentioned yesterday, today is Seth’s birthday! Due to my lame course schedule (read: in class until 8:30PM), we don’t have any big celebration plans tonight, but I did make him a special birthday dessert, as per his request:
In accordance with tradition, I baked up a pumpkin pie in honor of the occasion.

I used to request spice cake with Mumsy’s delicious maple frosting every year, but somehow that tradition faded. My all-time favorite birthday cake was for my 22nd birthday:
Despite my fondness for cake frosting, I ate some healthful meals today.
This morning’s oat bran was somewhat Indian-inspired in that I cooked the oats with coconut milk, ginger, cinnamon, and a touch of curry powder. It was a good idea in theory, but it wasn’t my favorite flavor combination.
Lunch was an Ellie recipe, Chopped Nicoise Salad.
My tweak:
-I used much more Dijon for the dressing than was called for in the recipe. I like a little extra kick:)
First, I was surprised to discover that this recipe omitted one crucial ingredient—correct me if I’m wrong, but doesn’t Nicoise salad typically contain hard-boiled eggs? I contemplated adding some but ultimately stuck to the recipe. It’s probably a good thing that I left out the eggs anyway—this was one HUGE and flavor-packed salad! I had trouble fitting the huge volume into a single container. I really dug the combination of textures in this salad; I shall be adding potatoes to my salads more often!

My cake changes every year. This year was a flourless chocolate cake. Good, but I’m sure I’ll change it up for next year.

My b-day is on the end of the month and I am already dreaming of my favorite treat: Ice cream! In particular Italian Gelato from Henry’s Gelato!! Have you been there Caroline? (there are stores in Cary and Raleigh)
His Gelato is the best, amazing! And lots of non-dairy based flavors too.
I love baking cakes (and can make some pretty nice decorated ones), but I am not fond of eating cake, and I truly dislike frosting, so my treat of choice for my birthdays have always been Ice Cream!! Oh my, I love ice cream!!

I think my husband would love if I made him pumpkin pie for his birthday in June — he loves it, but doesn’t like cake. This might be our new tradition, lol.

I used to be request angel food cakes with sugary strawberries, ha, but anymore, I don’t really have a birthday cake tradition.
Interesting breakfast flavorings! Were you going for a savory oatmeal or sweet? Brave of you to start the day off with a curry.
Also, Isa Moskowitz’s Appetite for Reduction has a vegan Nicoise salad that I LOVED. You’re right about them usually including eggs, though. I blogged about that version here, if you’re interested:

Wow that gumbo looks amazing! I love that Seth has pumpkin pie on his birthday and that Grinch cake is AWESOME. I almost always have a cake with Oreos in it or on it

My man likes pumpkin pie for his birthday, too! I thought he was the only one.
Last year I made him mini pumpkin pies in a muffin tin — sooooo yummy!
