Amenorrhea is a topic that I thought was important to address. In my personal experience, I struggled with the condition for over four years and would have loved to find advice about regaining a period, not to mention to have knowledge that others out there suffer with the same thing. I got a little flack from friends and family for broadcasting the details of my period to the world, but I don’t care—it’s an issue that continues to grow with the ever-increasing prevalence of eating disorders.

I had grown to rely on a daily runner’s high, so it was quite a challenge for me to make peace with my injury and just keep hoping for a safe recovery.

Gonna Be an RD!

The summer of 2010 was one of important milestones—I graduated from Duke University in May and was accepted to the Meredith College Masters in Nutrition program in July. Let’s hope the future has some more milestones in store!

Enough on the past…let’s move to the present. Here’s how I kept myself energized on this fine Friday:

One the recipes I considered making for Pea Week was Mama Pea’s Ginger Pear Waffles (but ultimately got cut because I already had two other breakfast recipes on the agenda). I used the flavor combination as inspiration for this morning’s batch of protein pancakes. The major tweaks I made were substituting vegan protein powder for some of the flour and using freeze-dried pears instead of fresh.

After a long day of grocery shopping (both for work and for myself) amidst crazed shoppers seeking hurricane supplies, I finally came home to make a big salad featuring another one of those tasty salmon burgers and assorted veggies. While the patty was cooking, my creativity set in, and I decided to grill up some peaches for a fun twist. They made for quite a delicious addition!

Tonight’s dinner was diner-themed…with a modern twist, of course. I made a grilled cheese with apple & grainy mustard for a tangy kick, plus a few nutritious accompaniments.

The real star of the meal was Ellie’s Chocolate Egg Cream.

My tweaks:

-I used almond milk instead of regular milk.

-I used special dark cocoa powder instead of regular cocoa powder.

-I used Truvia instead of sugar…because I apparently used up every last speck of sugar in my last baking experiment. Oops.

In all honesty, I was drawn to this recipe because it involved a pretzel rod—who doesn’t love a pretzel rod? They remind me of my childhood when my best friend Callie and I would pretend we were smoking cigars (and it appears Margot is following suit). Anyway, the real star of the show was the homemade chocolate syrup—I had no idea making your own chocolate syrup was so easy! Just combine cocoa powder, sweetener of choice, and boiling water…voila! Chocolate syrup is born. It’s darn tasty too; I just might have sneaked a lick or two before stirring it into the milk/seltzer mixture. FYI, despite the name, there are no eggs in this recipe!

Clearly, I hated my meal.

Now if you’ll excuse me, I am off to snuggle up with Margot (and maybe Seth if he’s nice), watch Chicken Run, and await the fury of Irene. Have a safe weekend everyone!

  4. I was wondering about that egg cream – I would have been surprised if you had made one with actual egg (like are are traditionally made). Uncooked eggs in drinks creep me out a little, although I have discovered that egg whites in cocktails are actually quite delicious thanks to my favourite mixologist.

    And I think it’s interesting that your friends and family were upset with your talking about your period in your post on amenorrhea – it’s funny how people think talking about personal medical conditions should be kept quiet, yet really talking about them and knowing what runs in your family is actually really important for your own future health.
