Shoulda Coulda Woulda
I don’t have many regrets. But I do have one. I should have taken a photography class in high school.
As a young teenager, I was far too focused on my other pursuits to consider taking up an additional hobby; I was perfectly content balancing my time among my schoolwork, vocal studies, and, well, doctor’s appointments. Besides, I always assumed I wasn’t “creative enough” to partake in photography classes.
Now that I am a food blogger, however, a few photography skills would certainly provide some benefit. What little photography knowledge I now possess, I have acquired through trial and error—take one look at my early posts, and you’ll see what I mean!
It’s not too late to learn a few things about how to take a proper picture though. Rather than adopt a “shoulda coulda woulda” attitude, I’m hoping that someday I’ll have another opportunity to take some photography classes—particularly if I ever become so fortunate as to own a Canon Rebel. (A girl can dream, right?).
Do you have any regrets?
Fortunately, I do not regret any of my meals today (OK, lame segue).
A few days ago, I finally got my hands on some xanthan gum that I’ve heard so much about in the blog world. It seems to be a must-have for smoothie makin’, so obviously I had to give it a whirl…in the blender. I used just a 1/2 tsp in my smoothie this morning, and it made for a gloriously pudding-like texture. Next up: Faux Frosty!
Remember HumMondays? I used to make a hummus plate every Monday, without fail. I decided to resurrect the tradition today. Matt and I were discussing the amazingness of the Peanut Sesame Hummus recipe from ED&BV last week, so there was no question as to which flavor I would make this afternoon.
For dinner, I knew I wanted to BBQ sauce—is that a normal craving to have? Regardless, I honored the craving with a BBQ tofu sandwich.
Alright, I now have to go find a place for all my food that’s been strewn about the kitchen—I guess my mom doesn’t like the idea of hummus and Puffins hanging around for her party on Thursday. Go figure. Good night!

Hello and welcome! I have created this blog for people who love food, especially healthful, vegetarian food.
I have just graduated from Duke University with degrees in English and psychology. I plan to pursue a master's degree in nutrition starting in Fall 2010. Ideally, I would like to combine my love of food and the written word someday as a health writer.


That is one of my biggest regrets! I never thought I was creative enough (or had enough free electives) to take a photography class. Unfortunately I was too busy with academic classes and such. Now I have to PAY for them!!!??

I don’t regret anything I ate today either! And I do wish I had taken a photography class.
I keep hearing about the xanthan gum and I still haven’t bought it. It’s on my list though.
I took a graphic arts/ photography class my senior year of high school because we were *required* to take an elective class of that type in order to graduate. I really liked it! (I just wish we got to use the fancy cameras though haha.) I feel like photography’s one of those things you can pick up on at any point in your life and still enjoy to the fullest, so don’t let a regret of the past bring you down!
And yepppp you are not alone with your BBQ sauce cravings!! Thankfully I have a huge container full tucked away in the fridge

I hear ya on the photography. It would be nice to have a little bit of that knowledge! I haven’t tried the xanthan gum either. I want to, but have not jumped on it yet. Oh, and I think it is completely normal to have a craving for bbq sauce…at least I hope it is!
ohhh yeah i definitely have bbq carvings every once in a while! that sandwich looks amazing!!!
I definitely regret not taking more photography classes as well. I love xanthan gum – it makes smoothies SO much thicker

I seem to think that any and all cravings are normal — I mean, I sit around the office craving marinated kale — so BBQ hardly seems uncalled for.

I took photography in high school but I had no idea what I was doing. I still don’t know what my camera is capable of – it’s all trial and error!
I have few regrets, but I also have one major regret I can think of. Not traveling abroad during college! I was so focused on my major and getting experience, getting through, getting good grades, etc. that I never took the time to see outside the box.
Ah well. My trip to Paris will just have to be postponed but not for forever.

I enrolled and then dropped out of a manual photography class. I regret that I don’t have any KNOWN (it could be realized later!) artistic talents.
BBQ is definitely a normal craving to have….at least i hope it is, as i tend to have that craving a lot of the time too!!!
I have a lot of regrets, but i try not to dwell. The past is the past and all i can do is change the future:-) xx
I love xanthan gum!! Just be sure not to use too much of it otherwise your smoothie will turn into a big glob. Bleh! And I know what you mean about the photography class..I kind of wish I did, too. I’m anxious to see how much my food blog pictures change over time like yours have
Caroline, I shocked myself and bought a HUGE tub of spinach & artichoke hummus from Costco. I blame you! hahaha!
I regret not spending as much time with my friends as I should have in high school. I was in the depths of ED and basically secluded myself. I missed out on all the joys of high school life!
