Snow Day

As predicted, the Raleigh-Durham area was blanketed with snow, er, ice last night…meaning that I was blessed with a snow day, after just one day of the new semester.

Given the fact that I grew up in the snow-barren state of Alabama, I was a bit perplexed as for what to do with myself on a snow/ice day. The roads were too treacherous to go anywhere, and the freezing rain and sleet weren’t exactly enticing for building a snowman.

Diligent student that I am, I began with some homework.

Once that was out of the way, I decided to entertain myself with another Ellie recipe, Nutty Granola.

My tweaks:

-I used Craisins instead of the suggested raisins because, well, I’ve got a multi-pound bag of them taking up valuable space in my pantry.

-The recipe called for just a quarter-teaspoon of cinnamon for the whole batch. I’m more of a cinnamon enthusiast than that, so I probably included at least a whole teaspoon.

This recipe made a much greater quantity than indicated—the yield was supposed to be about 4.5 cups, but mine was closer to 8. Not quite sure how that happened, but as a result I have quite a granola bounty these days.

The aroma of the granola baking in the oven was straight-up intoxicating.

Boredom soon set in again, so I made a trek across the street (on foot) to Target. After a few slips on the ice, I eventually returned with my intended purchase, a foam roller (as per the recommendation of my brother-in-law Major and many of you knowledgeable commenters). I used it for about 10 minutes, and I immediately felt relief from my hip pain. Yee-haw!

Amidst the aforementioned activities I managed to down a few meals too.

By the time I returned from the gym this morning, I was famished. So, I opted for the fastest breakfast possible—cereal.

For lunch, I made a colorful salad topped with my homemade peanutty dressing.

My evening meal was one that is destined to be repeated in the future. Tahini with squash is perhaps an unexpected duo, but I lurve it. Recipe to come.

    i went the less healthy route and made cookies (though they were oat + whole wheat flour-based) :) josh’s coworkers are going to be very happy today . . .

  8. hooray for a snow day! :) we only had 1 the whole time i was at ohio state, and i still had to go to work because i was growing a ton of cells in the lab!

    and in michigan, we rarely will ever call snow days because we’re all used to driving in hazardous conditions, i guess. :)
