So Much to Celebrate

Good evening, all! Thanks so much for your kind words in response to yesterday’s post. Losing a pet is never easy, but you all made it about as painless as possible. A thousand times, thank you!

As I mentioned before, last night was my 2nd year anniversary with Seth. I had an exam (my last one!) today, so we kept our celebration pretty simple—just a quiet dinner at one of our favorite restaurants in town. The celebration continued today, as I officially finished the fall semester!

You’ll get the details on the anniversary dinner later…but first, let’s rewind to yesterday morning.

Thursday

In case you didn’t know, cranberry + chocolate + coconut is one of the best flavor combinations on the planet.

I took a quick study break to make a comfort food classic: grilled cheese and vegetable soup. I used those new “BIG” natural cheddar slices for the grilled cheese, and it turned out perfectly gooey and just like Mom used to make.

Soon enough, it was time to head to dinner with Seth. Once again, we dined at the Irregardless Cafe.

To start off, we ordered the hummus of course—we’re both pretty hard-core chickpea enthusiasts.

Seth seized the opportunity to enjoy red meat and ordered his usual Steak au Poivre, while I ordered the Five-Bean Vegan Cassoulet.

Lest you think he forgot, rest assured that Seth remembered the roses again this year—1 for each year of our relationship + 1.

“Does this mean I have to bring you thirty roses on our 29th anniversary?”

“Um, that would be a yes.”

Friday

I awoke bright and early this morning to fit in a combination sweat-and-study session (i.e., gym time with notes in tow!). Afterward, I made a peach pie parfait.

After my exam, I decided to celebrate by hitting up Whole Foods. I gamboled for a good hour in the aisles of the store before heading home for some re-fueling.

My brain was still pretty fried, so I decided to keep dinner simple tonight. I promise my cooking mojo will return soon!

Alright, I am off to relax with Seth and Marge. Good night, and happy weekend to all!

    I love cassoulets! My husband and I had the best one in Oregon. Ellie Krieger’s new book features a bean cassoulet recipe too. Have a great weekened, Caroline.

  3. Awwwwww!! You two are so frickin cute! I still remember our walk to West campus when you first told me about Seth! I CANNOT believe it has already been 2 years.

    Also, after you get married, the anniversary years start over…right? So Seth gets a break :)

    And yeah, the anniversary years start over once you’re married–all the more reason for him to propose already!

  5. I’m so sorry to hear about Ted, Caroline. But very happy for you and Seth. Sounds like your anniversary was wonderful – and I love the story of the roses! With regard to what Allie said above, Bobby and I still celebrate the dating anniversary, so if you want 30 roses, you get ‘em. ;)
