Soggy Monday
Today has been all about the soggy—not only was the weather excessively wet, but I also had a soggy food experience. It rained all afternoon (it began just in time for my trek back from Whole Foods), so I’ve had the pleasure of having damp/cold feet all afternoon. Despite my waterlogged day, I was looking forward to this evening’s dinner because I was headed to a local restaurant with the dining committee for a “Mediterranean sampling.” Unfortunately, the sampling was quite limited, with no vegan options. I settled on a big hunk of delicious crusty bread with a bit of Greek salad. The salad was drenched with dressing, making it a bit of a mushy mess. All is well with the world now though—I have now pulled on the PJ pants and fed myself a second dinner:)
All sogginess aside, I managed to fuel myself well today:

Announcing the return of hemp! I have been on a Spirutein kick lately, so I made a delicious berry-peach hemp smoothie last night.
Monday
After filming my Foodie Obsessions video yesterday, I decided that a muffin parfait was in order this morning. I warmed up the muffin before crumbling it into the yogurt—phenom.
Also, inspired by that same video, I made a batch of pumpkin hummus. Between the carrots and pumpkin, I think I’m covered for my beta-carotene intake for approximately the next two weeks.
I was my usual wimpy self at dinner and did not take any pictures of my Mediterranean sampling that I described above. Not to worry though—my salad and bread was not exactly exciting fare to behold. For my second dinner, I just made a simple salad with edamame, bell peppers, and raw cashews.
Now I am off to homework…or perhaps watch Dancing with the Stars. Good night!
