Songs for Sight
I just returned from an evening of musical entertainment benefiting the UAB Department of Opthamology due to my father’s involvement with the Eyesight Foundation of Alabama. Not only was it an evening of fabulous music (featuring Sara Evans!), but it also made me realize how truly blessed I am to not have any sort of vision impairment. Throughout the evening’s program, several patients of UAB Opthamology shared their stories of low vision, making me believe that the gift of sight is truly something to be appreciated. Can you imagine not being able to read? Use the computer? Recognize the faces of those you love? Vision is surely not to be taken for granted. What would you miss the most were you to lose your sense of vision?

Friday
Yes, I still made room for a (smaller) smoothie, even after my pizza and ice cream. Don’t judge.

I woke up bright and early for my 7:30AM race (!). It was a hot one–gotta love Alabama humidity too. Look for race details tomorrow. Anyway, by the time I returned home, I just wanted food–fast. Cold cereal was the way to go.

We’re up to “O” in the alphabet challenge! Does the “O” in old-fashioned count too? Anyway, thanks to VeggieGirl for this spread that she sent me for my birthday last December. Note the return of the “skillet shot.”


"O" Oats: Old-fashioned oatmeal, vanilla soymilk, cinnamon, orange almond butter, orange segments, orange zest

My dad and I made a long overdue trip to Whole Foods today. Check out the goods:

the produce: rainbow chard, bok choy, naners, carrots, blackberries, raspberries, green onions, garlic, ginger, spinach, broccoli, Champagne mangoes, mushrooms

the frozen goods: mini blueberry waffles, mango chunks, strawberries, Sunshine Falafel, Sunshine Breakfast Patties, vegan potstickers

the fridge food: Oikos (blueberry & honey), Rachel's cottage cheese, Fage 2%, Tempeh-tations

miscellaneous: Acai Apple granola, BBQ rice crisps, whole wheat bow tie pasta, dried figs, chickpeas, lentils, vegan mayo
As you can see, today was a particularly successful trip–I was practically frolicking through the freezer aisle when I discovered those Sunshine products.
To make room in the freezer, I used up my last Garden Herb Sunshine Burger–yet another sunflower seed product that has earned by devotion.

All I have to say is that the people over at Madhava are geniuses for producing these flavored agave nectars.
Dinner was pretty rushed due to the show tonight. I improvised what you might call a crack sandwich; just like its crack wrap cousin, it is a melty, cheesy, hummus-ful concoction.

Major food porn! It looks amazing.
My mother is legally blind (completely blind in her right eye, mostly in her left). I’ve been helping her for a very long time – she’s managed to accomplish so much (Ph. D!). I’m glad to hear that you support low-vision things.

I couldn’t imagine life without vision. Thinking about it really scares me. I would feel so vulnerable, and it would be a totally different life. I was thinking about what one thing I’d miss the most, and there are a lot–family’s faces, driving, the computer, etc. But what I’d really miss would just be that ease of independence. Without one of your main senses, life becomes so much more challenging. I wouldn’t be able to rely on myself so easily.

I would most miss my kids faces if I lost my sight. That would be devastating to me.
I don’t know WHAT I would do if I lost my sight… I’m such a visually-oriented person. I would miss looking at nature the most, I think.
