Soundtrack to Life

As I was walking home from the gym this morning, enjoying the weather and generally delighting in my lifted spirits, “It’s a Great Day to Be Alive” came on my iPod. I don’t normally listen to much country music, but one of my friends sent me a “wake-up” mix CD with this song on it, and I have grown to love it! I’ve decided that it would definitelybe on the soundtrack to my life, were they ever to make a movie of it. Do you ever imagine what would be on the soundtrack to your life story? What songs would be on it? I contemplate this question quite often…it’s a fun topic to ponder.

The sample and coupon fairy has visited me a few times since my last post. First up, Earth Balance soy-free spread. I received these samples so that I can review them for VegFamily. I’ve never been much of a butter/margarine user, even pre-dating my ED days, so I am a bit perplexed as to how to use it. Any suggestions for using Earth Balance?cimg6696

These arrived just in time for my weekly Whole Foods trek. These coupons will surely come in handy; I am planning a comprehensive Greek yogurt review in the upcoming weeks. Now all I need is some Fage to complete the Greek yogurt triumvirate (aka Fage, Chobani, Oikos), although I plan on including other brands as well, including Greek Gods and Trader Joe’s.

Wednesday

I whipped up a batch of this fabulous hummus before tutoring the other day. All I can say is WOW. This may be my favorite homemade hummus yet. The flavor oddly reminded me of pizza. On another note, that pita was pretty phenomenal as well. My local Whole Foods stopped selling my usual Ezekiel pitas, so I bought a package of the whole wheat pitas from the bakery. Yum! I might make the switch permanent due to their sturdier texture and overall tastiness.

Thursday

Yep, I’ve already made my way to D in the alphabet oats challenge. I cheated a bit and allowed adjectives (i.e., dark) to account for D ingredients. The date-chocolate combo was D-Vine. Sorry, I couldn’t resist.

More tutoring yesterday afternoon, so I kept it simple with eggless egg salad. While silken tofu is probably a better approximation of the hard boiled egg white texture, the regular works fine too. Next time, I plan to do a humbecue version, as inspired by Jenn and Sarah.

I’ve decided that the dark chocolate walnut Nectar bar is my new brownie fix.

With multiple papers on my horizon, I kept dinner simple last night. I think baked blue corn chips are now a pantry staple for me. What, you mean that’s not a normal pantry staple?

Friday

I’ve decided I need to branch out from my usual vegan banana pancake recipe, so I tried this one for Whole Grain Blueberry Orange Pancakes this morning. YUM! It may appear that the recipe yields fewer pancakes than my usual banana one, but I think this is merely a result of my sneaking a few too many tastes of the batter. Gotta love egg-free pancakes–you can lick the spoon as much as you want. Anyway, these tasted just like blueberry muffins! I especially like the inclusion of wheat germ in the mix:)

  4. I know this sounds a bit sad but I have only just discovered hummus and as you make it quite often some hummus recipes would be nice in the recipe section, you make so many delish sounding things you could have a huge list, or maybe you should write a book :)

  7. I’m not a big butter girl but it’s good on toast with jam or buttered noodles (noodles, butter, parm).

    Your artichoke hummus reminds me of this spinach artichoke hummus I’ve had before – D-vine! ;)

  10. I’d love to see a recipe for a humbecue version of the eggless egg salad if you decide to make it.

    The Earth balance might be good for baking, perhaps? Those ‘D’ oats look amazing: sooo dark, dense, dreamy, delectable and divine (okay, I’ll stop now).

    The soundtrack to my life would be…interesting. I’m in love with the German band Rammstein so almost all of the songs would be theirs, but I’ve already said many times that at my funeral I’m getting cremated and while I’m burning they have to play ‘Highway to Hell’ by AC/DC. Then I get accused of being morbid and freaking people out…hehe.

    On a lighter note, while I was running this morning ‘Beautiful Day’ by U2 came on my IPod while the sun was coming up, so that really brightened up the morning.

    First off let me educate you in the art of “butter” using. I too was petrified of the stuff during my ED, but we’ve become excellent friends in the last few months.

    A few ways to use it:

    -Spread it on sweet potatoes and top with a sprinkle of brown sugar

    -Sautee some almonds in a tsp or so with some stevia, salt, and cinnamon. Use to top oats, salads, or mix with air popped popcorn.

    -Speaking of popcorn. Melt a bit of “butter”, mix with veggie broth, and sprinkle on popcorn with salt.

    -Make vegan frosting by mixing with powdered sugar and cream cheese, coconut, or coco powder. Use for cupcakes etc. ;P

    It’s also a nice way to sneak some calories and flavor into broccoli, carrots, and peas.

    I’m not a big butter person either, but sometimes it tastes great with the obvious pairing of toast. Usually I use nut butter but on occasion the “other butter” taste hits the spot!

    I would love to see a smoothie page, too!
