Spring Break, Day 2: Animal Kingdom & Epcot

Good evening, bloggigans! I write to you after a full day of Disney celebration—we managed to visit not one, not two, but three parks today! As you might imagine I am one pooped chica at the moment, but I have plenty to show you this evening. Here’s how day two of my dream vacation transpired:

Considering our shared devotion to fitness, it shouldn’t surprise you that my “treadmill buddy” and I rose early to hit the hotel gym. Upon returning, we made a big batch of banana oatmeal with the help of the hotel room’s coffee maker. Seth insisted that I show you his work of art in addition to mine…

Then it was off to the Animal Kingdom!

Next up on the agenda was Epcot, where we were first greeted by Daisy Duck and Stitch.

Lunchtime rolled around soon enough. We found a great food court that offered—get this—a tofu noodle bowl! Other items available included Silk soymilk, soy yogurt, and fresh fruit. May-juh points to Epcot for vegan offerings.

The afternoon included a tour of Epcot’s agricultural research center, where I spotted a few out-of-the-ordinary fruits and veggies.

Followed by a trip to see Figment, a tour of the butterfly garden, and a short nap in the sun:)

We grabbed an early dinner before heading over to the Magic Kingdom for the SpectroMagic Parade.

Due to my rather light dinner, I had a little “fourth meal” action when we arrived back at the hotel. TGFS: Thank God for Sabra.

Whew! Alright I am off to get some shut-eye. More fun in the AM!

  1. Sounds like so much fun! I’m going in August and it helps to know at least Epcot has some good options!

    oatmeal in a coffee maker?! That is sooo brilliant!!! I never thought of that! I bet it is amazingly better than just instant oats made with hot water too!!

    the greek salad and hummus wrap are making me droool!!

  3. Looks like you’re both having an amazing time- I love Disney, I have to go back, has been years since I went….You’re certainly packing in the fun, busy busy. Scoring well on the food-front too, that’s so ingenious cooking oats in the coffee maker!

  5. Wow, seems like your having an awesome time! You two are so adorable, I cannot tell you often enough! And using the coffee maker for banana oats – genius :) I really like how Seth arranged the oats in the cup- very pretty ;)

  7. Crannie–You look like you are having a GREAT time and I am glad you are finding things to eat. Loved the Tree of Life–could just picture the baby lion king. I also think Stitch looks a lot like Gus. Nice pic! Were those bats real?? Ewww! The photos are excellent. Love you, Mom

  15. Ohh, so nice that you are having that much fun at Disney!! It is an awesome happy place, always!
    Loooove the idea of oats in the coffee maker, give us more detail on how you guys did that, sooo cool!
    I had a great meal at the sunshine cafe (believe that is the name) in Epcot last year, they had a lentil salad that was so good, I love to find places with vegetarian options at the parks. Unfortunatelly that was the only great place I was able to find decent food though…

    The Animal Kingdom looks like so much fun! They built it right after I went the last time (when I was 6).
