Spring Break, Day 3: Biltmore Estate
Good evening, all! I return again today to share the details of our trip to Biltmore Estate, former home of George and Edith Vanderbilt.
After a run in the chilly sunshine, I fueled up with some oat bran.
Then our trip to Biltmore began. As you’ll see from the pictures below, it’s quite an expansive estate, with acres upon acres of forestland. The home itself is decorated in such a way that you would think royalty lived there. Sadly, no photography was permitted inside the house, so my only pictures are of the surrounding grounds and village areas.
All that sight-seeing built up an appetite. We headed to a local Whole Foods-esque grocery store for lunch.
Tonight’s dinner was an Ellie recipe, Macaroni and Four Cheeses.
My tweaks:
-I used unsweetened almond milk instead of non-fat milk—there are only so many items our small fridge can accommodate!
-I used reduced-fat cheddar (Cabot 75% reduced-fat sharp).
-I omitted the Parmesan cheese, again in light of our limited fridge space. So really, my version is Macaroni and Three Cheeses.
I’ve never made homemade macaroni and cheese before, and I was pleasantly surprised at how easy this recipe was. Just grate the cheese, heat up the sauce, and shove it in the oven. That being said, it still dirtied a lot of dishes—thank goodness I have a very helpful dishwasher named Seth. In terms of taste, the cheesiness was milk in comparison to say, Stouffer’s, but I found it delicious nonetheless. I added a tad more salt to my serving.

I made one of your hummus recipes last week and I loved it but I have a few questions. How long do you think it can keep in the fridge? (aka I have it packed for lunch tomorrow and that makes it 7 days old) AND Do you find it is ever really thick? do you ever add water? Thanks!
