Spring Break, Day 4: Farmers’ Market Fail

Good evening, blogland. Today’s spring break agenda included a morning hike, a trip to the farmers’ market, plus some exploration time in downtown Asheville. The hike among the mountaintops made for a refreshing start to the day.

Afterward, I fueled up with a couple Ellie’s Energy Bars.

My tweaks:

-I omitted the nonfat dry milk because I couldn’t find it in the local grocery store.

-I substituted Craisins for the raisins—just for the extra kick of color:)

These bars are the perfect amount of sweet—just enough to be delicious but not so much to be overwhelming. Plus, the only sweetener used in this recipe is pure maple syrup. Another added bonus is their portability, which has made them perfect for traveling.

As you might guess from this post’s title, the trip to the farmers’ market was less successful in that Seth and I were pretty much the only customers there. Most of the items being sold (apples, sweet potatoes, etc.) were available only by the bushel—a quantity much too large for a single gal such as myself. Although I had visions of leaving the farmers’ market with bags full of fresh produce, I left empty-handed.

The afternoon made up for the slightly disappointing morning in that we had a seriously delicious lunch. We had intended to visit Laughing Seed Cafe, as recommended by Sarah but soon discovered that it was closed.

Fortunately another veg-friendly restaurant was just down the street: The Early Girl Eatery.

I ordered the Avocado & Sprout Sandwich with black-eyed pea hummus. I also ordered a side of stewed kale.

I thoroughly enjoyed my lunch, and Seth professed his cheeseburger to be the best he’s had in the past five years!

We had plans of attending a downtown ghost tour this evening, but after receiving some bad news regarding my health (to be detailed at a later date), we decided to spend the evening in. I put those farm fresh eggs to good use for dinner by making them into pita pizzas. I’ve never really had eggs any way other than scrambled or hard-boiled, so this meal was a delicious change of pace! I’ll be sure to post the recipe soon.

Alright, if you’ll excuse me, there are a few DVDs calling my name.

  8. The hike looks gorgeous! What restaurant is closed on Tuesdays?? How random! The sandwich looks amazing!! And I’m a bar fanatic- not sure I’ve ever tried Ellie’s recipe. Hope today is fantastic!

  9. So sad that Laughing Seed was closed! Seems like Early Girl was a good second choice though. I was in Asheville for a day in December, and Early Girl had a line out the door.
