Spring Break, Day 6: Singin’ in the Rain

Greetings from Asheville! As you might guess from this post’s title, the rain gods once again showered western North Carolina with much precipitation. Nonetheless, Seth and I still managed to have a good time today.

The day began with sunshine and a breakfast parfait.

The morning’s sunny weather convinced us to try venturing to the Asheville Botanical Gardens. However, by the time we arrived at our destination, the dreary skies had returned.

What better time to do some singin’ in the rain?

We warmed up with a cup of coffee at Green Sage in downtown Asheville.

After some exploring downtown, we enjoyed a late lunch at Chorizo, where I ordered the Tofu Scramble. Little did I know that it was not the tofu that was scrambled but rather a side of eggs. Oh well—it still made for a delicious meal.

The Mexican-themed menu continued into dinner, when I made taco salads for the two of us.

We had a dessert waiting for us in the freezer, Ellie’s Chocolate-Covered Banana Pops.

My tweaks:

-I used semi-sweet chocolate chips instead of bar chocolate, as the local Food Lion doesn’t carry much in the way of dark chocolate.

-I used chopped almonds instead of chopped peanuts…just because I like almonds.

Considering my love of the choco-nana combination in everything from pancakes to protein shakes, it should come as no surprise that I found these pops completely delicious. That being said, they were quite messy to create, so I’m not sure I would make these with any sort of regularity. I like a clean kitchen!

  6. That tofu scramble plate looks amazing! And yeah, the name is a little misleading, lol. I thought it was scrambled tofu with a side of tofu, LOL.
