Spring Break, Day 7: Last-Minute Adventures

Tonight I write to you with a slightly heavy heart—tonight is our last here in Asheville. It’s been a thoroughly enjoyable vacation that I’m sure we’ll remember for a long time.

To begin our last day of spring break, I fueled up with a big bowl of oat bran, featuring some wheat germ leftover from those energy bars.

Then we headed into the city for one last look at the funky downtown shops.

For lunch, we headed back to the cabin in an attempt to empty out our refrigerator.

At some point in the afternoon, amidst my snacking, I managed to get granola in my eye. Not such a big deal, right? Wrong! It hurt, and I was scared it would scratch my cornea and blind me. Seth rushed to my rescue—but first, he had to take a picture.

We spent our last evening in Asheville at Laughing Seed Cafe. Apparently, the third time is the charm, as the first two times we attempted to dine at this local hotspot, it was closed! It was well worth the wait, however, as we enjoyed some seriously good eats.

To begin, we ordered the sun-dried tomato hummus with whole wheat pita. Although I like a chunky and hearty hummus, this version was a bit extreme—a tad too dry for my taste. Nonetheless, the flavor was still good.

For my entree, I ordered the Laughing Seed Salad topped with grilled marinated tofu and mango-lime vinaigrette. The vegetables in this salad were incredibly fresh—even the raw corn seemed to have a candy sweetness to it. I will be re-creating this salad in my own kitchen in the future, for sure.

Alright, I am off to pack up before our early departure tomorrow morning.

  11. That button bouquet is so adorable! Sorry about the granola-in-the-eye-fiasco, haha. People think I’m lying when I tell them the random things that have found their way into my eye…so bizarre. I think my eyes must be an abnormally attractive place for pieces of food, like a magnet. That, or I’m just an insanely voracious and messy eater ;)
