Spring Break Surprise

As of 5:15 PM this evening, my spring break has begun. After 4 classes, two midterms, and one mondo headache, I am delighted at the prospect of a full week off from classes.

So, how will I be spending all of this free time, you ask? I’ll give you a hint:

That’s right, friends—Seth and I will partyin’ it up with Mickey and Minnie in DISNEY WORLD!! Obviously, we are both pretty pumped about the prospect of reverting to childhood for a whole week. We’ve got the whole week scheduled:

Yeah, we’re both “planners.”

We leave on Friday—I’ve got so much to do before then…including finish this post. Onto the grub:

Before heading off to my first midterm, I enjoyed a big honkin’ bowl of my beloved GoLean, with a few Power Point slides for my Psychology of Consumers class.

I returned home for a breather between classes and re-fueled with a big-girl size portion of Lemon Ginger Hummus.

Once I finished my last exam, I flounced on home to do some blog-reading, then prepared a batch of Avocado Eggless Salad. Another supersize meal for today—gotta keep that brain crankin’.

Now I am off…to do absolutely nothing. And I will love every second of it. Be back tomorrow!

Good luck with all your projects and exams! Your meals, as always, look amazing! Avocado eggless salad is genius!

  15. Disney World sounds like so much fun! I went to DLand when I was younger and if Mickey Mouse shaped pancakes for breakfast don’t equal fun, I don’t know what does. I love that you have a day-by-day schedule. I don’t even know if my boyfriend would pretend to humor me on that one. Have fun and enjoy some Mouse shaped pancakes!
    :)

  16. So happy to see that you’re coming to Disney…given that I’m a college intern for Disney! I work at 2 of the resorts and love every second. You’ll have such a blast, there’s so much to do, it’s not even comprehendible!
-Relive your childhood at Magic Kingdom and get a good standing spot for Wishes, the fireworks show. You won’t want to miss it!
-Ride Rockin’ Rollercoaster and Tower of Terror a million times each at Hollywood Studios. If you’re there on Thursday or Sunday, check out Fantasmic at night!
-Say hi to all of the cute animals at Animal Kingdom!
-Drink, eat and play around the world at Epcot. A few of my friends work at Soarin’, which is SUCH an awesome ride.

  17. Have SO MUCH fun in Disney!! Can’t wait for the recap :)

Please save your itinerary of notecards if you can and send them to me- seriously- I need help in the organization department and wouldn’t know where to start!

  22. Jealous of your trip to Disney World! I’ve never been. And haven’t been to Disney Land since I was 8 years old – lots has changed since then.
