Stuffed Tomatoes with Herbed Salmon Salad

(Serves 2)

Ingredients

  • 6 oz pouch of skinless, boneless salmon
  • 1/4 cup non-fat Greek yogurt
  • 2 T fresh dill weed, chopped
  • 2 T fresh parsley, chopped
  • 2 T fresh chives, chopped
  • salt & pepper, to taste
  • 2 medium tomatoes

Method

1. Combine salmon, yogurt, herbs, salt, & pepper in a small bowl.

2. Remove the tops of the tomatoes and scoop out seeds and most of the inner flesh to create a cavity. Place half of the salmon mixture in each tomato. Serve on a bed of greens with a side of fruit, if desired.
