Surpassing Expectations

In a word, my run this morning was –dare I say it?—epic. Why such an intense (albeit slightly clichéd) adjective for my morning exercise routine? In essence, it was epic because it surpassed my expectations.

I woke up this morning to a disappointing weather report: 85 degrees and humid—at 7 AM. Not exactly a runner-friendly forecast. Bearing this in mind, I ate a quick snack and headed out for what I predicted would be a quick 3-mile run.

I won’t lie to you, all I could think about for the first mile or so was “how much longer ‘til I can return to the friendly elliptical machine?” Once I hit mile 3, however, I hit my stride—I seemed to glide amidst the trees, and my breathing became less labored. By the time I returned home, I had far surpassed my expectations and had run 7.5 miles. I busted through the door tired, red-faced…and soaked with sweat. Despite my less-than-glamorous appearance, I felt like a champ—I felt alive and strong.

When was the last time you surpassed your expectations for yourself?

After a run like that, I needed some serious re-fueling…

Whenever I have fresh berries lurking in the fridge, I relish the opportunity to incorporate them into a lovely breakfast parfait. This morning’s rendition did not disappoint.

Before heading to my dentist appointment this afternoon, I made myself a black bean burrito, topped with the Smoky Avocado Sauce from ED&BV. Obviously, this was a fork-and-knife-required burrito.

For dinner, I put together a few tofu lettuce wraps. I simply combined onions, garlic,  tofu, cashews, soy sauce, and ginger for the filling. Not quite as delicious as the Chang’s version but still tasty.

It’s Tuesday do you know what that means…The Little Couple is on! Ciao, lovelies—Bill and Jen await me.

  2. I miss running :( I haven’t had that fabulous feeling in a looong time. Love your ‘mangled mango.’ Hehe. PS congrats on getting into grad school. I read that post in the car I believe so I couldn’t comment.

  5. Awesome run! That’s amazing; I haven’t had a workout like that in a good couple weeks. The feeling after you’re done is just amazing! I just wish it could feel amazing while you’re actually doing it… hahah.

  7. Haa, I know what you mean by “mangled mango.” I cut my first mango about a week ago…my mom asked me to do it because we had a guest coming over for lunch. Honestly, I don’t know how they get to be the perfect chunks you find in the frozen aisle!

  8. I use to be a hardcore runner and would love that feeling after a nice long run of domination. it set my mood for the rest of the day!

  9. Sounds like a great running experience!! I hit my stride while rollerblading the other day, but I only got to go another 1.2 mile b/c I was crunched for time :/

  10. okay 3 miles to almost 8 is like an insane increase and one that you should give yourself like about 12,000 hugs for!!!!!!!!

  11. All those meals look like restaurant eats. Lettuce wraps are Asian appetizers..parfait on practically any breakfast menu, and of course black bean burritos are on every mexican menu! You went international :)

  12. Good to know I’m not the only one who tends to mangle mangoes when cutting them up as well. Damn fibres!
