Sweet 17!
In all my belly-aching last night, I forgot to commemorate a very important date in Yoder family history—Ted’s birthday!
I still remember the day we brought Ted home: I was just six years old, and he was a mere six weeks old. From day one, he has been a delightful mix of spunk, smarts, and sweetness. Happy 17th, Ted!

Another rather fantastic bowl of savory oats. How did I go 23 years without knowing the wonders of a fried egg?
For lunch, I packed a simple bean salad, dressed with a homemade orange vinaigrette.
Once home from my long day of class, I put Seth’s mangoes to good use and made my favorite Coconut Black Beans with Mango. YUM.
Alright, I am off to study for tomorrow’s chemistry lab quiz. Wish me luck!

17??? Wow! Happy birthday Ted- whoop! Great day o eats. I agree- savory oats with egg just rocks. And your dinner looks amazing. I really need to get on making that dish- I’ve had it book marked forever!
I love savory oats. I used a bunch of leftover steel cut oats to make dinner one time, by mixing in some beans and salsa and veggies, and topping it with an egg. It was delicious, and tasted just like rice.
And happy birthday to Ted – so cute!
Awe. I miss having a dog. The last 3 apartments I’ve had haven’t allowed dogs, so next time I move I’m seriously attempting to find a place where I can once again have a pet.
Aw Happy Birthday Ted! What a sweet old dog! This makes me miss my puppy so much, my dog Percy had to be put to sleep this past weekend
he would have been 16 in October. I got him when I was 9 so I really feel like I had him my entire life, but that does mean he had a long and full life. I plan to post some photos once I scan all the old “pre-digital” pictures.
On a lighter note, drooling over runny fried eggs at a restaurant last summer is what made me renounce full veganism and start buying local eggs . It’s a win win, I support my farmer and I get to eat them
