The Body Speaks the Truth
Ever since receiving my beloved heart rate monitor (HRM) for Christmas, I have begun to give more credence to the polygraph test. My heart rate most certainly fluctuates according to my emotions. Every morning before heading to the gym, I fasten the chest strap of my HRM and check my resting heart rate. Most of the time it’s around 70 BPM–with a few exceptions. For example, on the morning of my 30-minute presentation a few weeks ago, my heart rate was about 110 BPM. Eek. Then, this morning, in anticipation of my meeting/date this afternoon–you guessed it–up around 110 again. Perhaps I should wear it sometime when I am really angry–that might make for some interesting observations too;) I know a lot you girls use HRMs too–have you noticed that your heart rate changes according to mood?
In other news, I have a 5K coming up tomorrow morning–woo-hoo! The weather will be perfect:) What are you up to this weekend?

Inspired by Jenn and Sarah, I made a humbecue tofu salad for lunch. Although it looks like up-chuck, it’s quite delicious. I added some celery in there for color in crunch.

For dinner, I had to evaluate the Freeman Center for Jewish Life here at Duke. Alanna was kind enough to accompany me, and we both enjoyed veggie-tastic meals.

I will never get tired of my breakfast parfaits. This one was overflowing with tropical goodness. This flavor of the coconut milk yogurt was much more coconutty. Imagine that. The Pina Colada flavor was more coconutty.

For those of you who might be new to my blog I use ED&BV to refer to my favorite cookbook, Eat, Drink, & Be Vegan by Dreena Burton. Anyway, I have made this dish several times, and I can always count on it to satisfy:)

No pictures of dinner, as it was the end-of-the-year celebration for the dining committee. We had a private dining room at a local Maggiano‘s. I had a few glasses of Pinot Noir, plus some good pasta with mushrooms, and a few bites of apple crisp. None of the items were vegan-friendly, so I just did the best I could: picked the chicken out from the pasta, avoided bacon in the salad, etc. It was all quite delicious, nonetheless! Though I was not brave enough to take any food shots, I did get a few party pics. Here’s one my dining companion took of me after the wine kicked in:

Highlights include: soy yogurts, hemp milk (VeggieGirl’s fave), honey-cinnamon almonds (previously purchased here), and Yogi Tea.
Whew! Now I am off to enjoy my Whole Foods hot bar goodies, but you’ll have to wait to hear about that…and about my date!

How interesting about the HRM. Makes sense though. The body is just so amazing.
Girl, I just LOVE your eats. I am so jealous of those late night smoothies. Seems like such a great way to end the day and go to bed with a happy tummy. Random question…I’m sure you probably don’t count calories, I don’t really either, but I was curious as to how many calories you have per day. I always want to fit in a smoothie at night, but don’t’ want to go over-board, know what I mean? I’d love any insight you might have.

Hi there…I’ve been lurking on your blog for a few weeks. I love looking at your eats…they always look so yummy! Your parfait looks very very tastey!
What do you blend your smoothies up with? I mean a handheld or a blender? They look so good, I love smoothies, but end up putting the blender in the dishwasher and have to wait for it! Also what kind of hemp protein powder do you use? I was looking the other night online. I’m using soy right now and would like to try something else.

I have to thank you so much for introducing me to Nutiva Hemp Shake ~ I’ve been addicted to it ever since I saw it on your blog last summer. The Chocolate variety is divine, the Berry is very refreshing and the Amazon Acacai…well, the other two varieties are delicious! Lets just say I mixed what was left of the Amazon flavour in with liberal amounts of the Chocolate one to mask the taste.
Perhaps you should have worn the HRM during your date ~ it may just have gone sky high ; )
