The Boxed Soup Chef
If you’ve been a frequent visitor of the Broccoli Hut, you’ll know that I like soup, from pumpkin chili to sweet potato and peanut stew to plain ol’ tomato soup. While I love making homemade soup, my schedule does not always allow for such time-consuming culinary endeavors. Thus, I often rely on boxed soups by brands like Imagine and Pacific. Even when using these prepared soups, however, I cannot help but add my own twist—I inevitably add a few ingredients to the bowl. Alternatively, I’ll use the soup as a sauce to transform tofu or veggies into something completely new. See below for some of this boxed soup chef’s favorite creations.

I’ve had that TJ’s carrot ginger and it was good! My favorite boxed soups is probably pacific’s carrot cashew ginger. Yum! I like to add piles of sauteed veggies plus either beans or meat to my soup for a satisfying dinner. Then I top with plain greek yogurt or hummus or cashews!
i like the idea for the tofu baking in the soup, i’ll have to try that one.

Great post! I’m a huge fan of adding oomph to soup in the form of veggies and beans. The face? Chickpeas and kale in squash soup.
