The Enlightened Shadow
I headed to the hospital again this afternoon for another shadowing session with a dietitian. Today’s experiences were particularly “enlightening” in that I gained some insight into a side of nutrition that I never would have been exposed to otherwise. As I mentioned in my last shadowing re-cap, the RD whom I am shadowing works mostly with transplant patients but dabbles in other areas as well; today’s dabbling was in radiation oncology. This unit of the hospital is hardly cheery, but I really enjoyed the patient contact here as compared with other units. The nutritionist mostly recommended ways to increase kcalorie intake and suggested supplements for these patients. Part of the afternoon was also spent in the cardiac intensive care unit, where I met a recent heart transplant recipient. He was not happy to hear that he couldn’t have ice cream for a while! Overall, it was quite an educational afternoon; I left with a greater emotional and intellectual understanding of life as a dietitian.
I have a chemistry test tomorrow, so I better get to the food already!

In case you haven’t noticed, I take advantage of the mornings on which I don’t have class by preparing a big stinkin’ bowl of hot cereal. Today’s rendition was pretty fab. I had been neglecting my almond butter for far too long.

The midday meal was inspired by a dish from Taverna Nikos. You may recall my mentioning this restaurant before, because my parents and I dine there every time they visit me in Durham. Although they no longer have the salad on their menu, I remember its components quite well: artichokes, white beans, potatoes, and sweet peppers. I got a major craving for it this afternoon, so I created my own version with a little twist–a hummus-tastic twist, that is. I have far too much prepared hummus in my fridge right now, so I am attempting to whittle down the supply. I am dreaming up a version of this salad with homemade hummus…oh the possibilities…

For dinner, I made a salad inspired by a recipe from Totally Vegetarian, combining edamame and apple. As per usual, I changed it up significantly by omitting jicama, adding cashews, and seasoning with a bit of agave and ginger. So, basically, it’s more my recipe now than Toni Fiore’s. The end result was pretty freakin’ delicious.

Hummus twists are always a good thing
. Pine nuts + basil + artichokes = oh so Italian and delicious! Wow, how do you come up with all these fabulous recipes, not only on a daily basis, but for each meal?

The RD that you shadow sounds like she has a very interesting job! Do you have any idea what kind of dietitian you would want to be? I mean, do you want to go into nutritional counseling, or work in a hospital, school, sports, etc?

Yes, a hummus trifecta! This particular post reminds me of how I always used to follow a strict recipe for all 3 meals of the day last summer… ED&BV for lunch, VwaV for dinner, a blog recipe for b-fast…what has happened?! Now I make up random stuff all the time! But I always especially love your on-a-whim tofu creations – that’s the area I’m too scared to experiment in!

we are freaking twins! i used to have that lightlife deli meat all the time but recently reduced my processed soy intake, so there has been less…but it was def a staple for sammies in college. i havent tried the grape kombucha, cant wait to now though!

Wow…. it must be really interesting seeing all the different diets all the patients get. I’d love to hear more about it. I feel sorry for the poor heart patient…. all he wants is a little ice cream!! Ha! Maybe you can introduce him to the whipped banana that’s all over the blogs this week!
