The Sigg-shake Earthquake
Today around 2PM, I sat finishing my lunch at work, toggling between spreadsheets and food blogs—you know, the usual. Then I felt a gentle shake and heard a rattling noise—it was the sound of my Sigg, shakin’ its way across the table. My thought process went a little like this:
“Sheesh! What the heck are they moving upstairs? It’s shaking the whole building!”
Once the shaking had stopped, I resumed my work like nothing had happened.
About an hour later, I noticed a voice mail on my phone. It was from my dad:
“Hey Cran, just calling to see if you felt the earthquake up there in Raleigh. Hope you’re OK. [Click.]”
What?! That was an earthquake? And to think I was getting my panties in a wad about “noisy movers.”

Fortunately, the earthquake’s effects were pretty insignificant around here. The rest of the day went as planned…
Before heading off to class, I made a tasty waffle parfait, using Kashi seven grain waffles and fresh blueberries.
For lunch, I packed a taco-ish salad with black beans, corn, and guac. Normally, I prefer to use fresh avocado to make my own guacamole, but I really hate how ugly the homemade stuff can get by the time I eat my packed lunch (no matter how much lime juice I add!). I had a coupon for this Wholly Guacamole a few weeks ago and decided to give it a whirl. Frankly, it’s addicting. It has just the right balance of salt, garlic, and creamy avocado. Two thumbs up!
I was ready to eat pretty much anything by the time I got home—6 hours is way too long for me to go without eating! (Note to self: bring snack for next time). I still had the energy to make Ellie’s Fettuccine with Walnuts & Parsley.
My tweaks:
-I reduced the amount of Parm quite a bit from 3 tablespoons per serving to 2-3 teaspoons.
-I added some Italian meatless sausage for a little protein.
Maybe it was my hunger talking, but this dish was pretty fantastic! Sure, it’s simple, but it hit the spot for sure. Fresh parsley makes everything look and taste better in my opinion.

how scary!! I’ve never experienced an earthquake, but that would be a little frightening!!
all of yourmeals look delish!! I need to find some of those 100 cal packs of guac! I would totally bring them to school!! (carrots + guac = heaven! well, anything with guac is darn good!)

Living on the west coast, we get little tremors from time to time. Often I’ve missed out on our quakes, because I’ve been in places where you just can’t feel them (in a lab at school on top of a mountain made of rock, skating, sleeping). Once we had one while I was sitting at my desk at work. At first I thought it was a large truck driving past the building, but it lasted too long. We all kinda looked at each other, decided it was an earthquake, shrugged, and kept on with what we were doing once it stopped. I don’t know if it’s a good or bad thing that we are pretty lax when it comes to reacting to quakes here – they have to be pretty big for us to do anything. And they keep saying we are due for a very large one…ugh.
PS – I would love that pasta recipe. Walnuts with parsley and parm sounds awesome!
I was driving so didn’t feel it but right after the shake I started feeling dizzy for a couple of hours. how scary!

That pasta looks wonderful. I am going to have to try that. Glad you didn’t have any problems with the earthquake. That would be scary to feel, especially on the East Cost. Never thought to use waffles in a parfait!
