There's No Place Like Home

I was seriously channeling Dorothy and her Wizard of Oz friends today: all I could think about was my upcoming fall break this weekend and all the comforts of home. I even donned Dorothy-esque shoes today:IMG_1201

(I had to think long and hard for an excuse to incorporate my red shoes into tonight’s post…) Anyway, I will be flying out of RDU early tomorrow morning, and I am clearly pretty psyched about the prospect of 5 days at home. What are my wild and exciting plans for my time off? Sleeping in my own bed and reuniting with Fred are the first activities that come to mind:)

In preparation of my impending departure, my eats today were mostly composed of leftovers and pantry/fridge staples. Nonetheless, they seemed to satisfy me just fine.

Wednesday

I was in a tropical kind of mood last night, so I blended together some papaya chunks along with strawberries and coconut extract. Amazing.

Thursday

This morning’s breakfast was another bowl of savory oats, inspired by yet another international cuisine. With Mexican, Asian, and Italian checked off my list, I decided Greek was the way to go this morning. Finally, I thought of a use for those Laughing Cow wedges in my fridge! Which cuisine should I tackle next?

Once class was over for the day, I did a little dance, then prepared my lunch. Using frozen edamame and my ever-present apple supply, I made another Edamame Apple salad, a dish, originally inspired by a recipe from Totally Vegetarian (which I discussed in this cookbook video). I made a simple dressing out of white wine vinegar, ginger, salt, & a little agave nectar. The honey sesame cashews were the perfect addition.

After a little laundry and packing, I made one of my favorite dishes from Eat, Drink, and Be Vegan: Thai Chick-Un Pizza. Somehow that pineapple, peanut sauce, and chickpea combination never fails to make mouth-watering magic. There’s never enough room on the pizza for all the toppings I like, so I made the extras into a salad.

    But Caroline, Asian is not a cuisine! HAhaa, Chinese and Korean cuisine is totally different, and so is Thai, Indian, Vietnamese, Japanese, Singaporean, Indonesian, Malaysian, Cambodian, Burmese, etc! Haha, you get my point…so why not explore Asian cuisine a bit deeper? ;-)

    Question: Is there any veggie you DON’T eat? And do you ever crave…MEAT?

    i have yet to try savory oats, the sweet bowl I am just always drooling for! but sometime for dinner I will make the savory kind!

    I was going to get those multiseed crackers the other day! then opted not to, dont know why! I think I just bought too much that day haha

  15. I LOVE the shoes and I LOVE the Greek savory oats! I second VG, Indian oats would be fun. I don’t know how you’d do it (curry spice?) but if anyone could pull it off, it would be you.

    My Q – I know you’re going into Nutrition but what is your dream job within that? I mean do you foresee yourself being in the hospitals taking care of patients, having your own practice, etc.

  18. I was trying to clear out my fridge too in preparation for my departure (I definitely thought of it like winter break rather than just 2 days off haha). I ended up having to take the rest of my kefir bottle and drink it in the car. I did NOT want that to go to waste, no, no, no.

    Okay, so I think you should do CHICKPEA OATS! Use 1/2 oats/1/2 chickpea flour; hummus; fresh tomatoes, and garnish the top with roasted chickpeas!

  24. Oh and BTW; (Last thing I swear!!) Thai Oats = Coconut Milk, Red Curry Paste, Saffron, Ginger, Cinnamon, Ground Peanuts on top and shredded coconut on top! Yum!!

    OH and have you ever done Rice Pudding for breakfast? Coconut Banana Brown Rice Pudding? YUHUUUMMM!
