Two Weeks Notice

So today amidst my day-dreaming in stats class, I realized that in just two weeks, three major arenas of my life will change drastically:

Academics. The much anticipated last day of classes is April 28th…meaning I am just three lectures and one exam away from being free from organic chemistry for the rest of my life.

Fitness. May 2nd marks weight weeks since that fateful bone scan…and four months since I last ran without pain. I plan on taking it slow (in accordance with Pete Pfitzinger’s plan). Here’s hoping that I’m all healed!

Companions. Seth and I will be driving to South Carolina on May 1st to pick up dear Margot. Her crate is all set up, and her leash awaits on a hook by the door:)

Aside from daydreaming, I did manage to eat a few things today too.

After yesterday’s disappointing tofu scramble, I whipped up my own version for breakfast this morning. FYI, mine was way better—and I’m completely unbiased, of course.

For lunch, I packed a salad combination that I came up with a few weeks ago. I’m so used to dressing tuna with creamy sauces (e.g., mayo/Greek yogurt concoctions), but I am really digging its taste when combined with Trader Joe’s Soy Sesame Dressing. The wasabi peas weren’t nearly as awesome as usual, however, because they got soggy in the interim between packing lunch and eating it.

Tonight’s dinner was a simple Ellie recipe, Herbed Couscous Timbale with Dried Fruit and Nuts.

My tweaks:

-I substituted almonds for pine nuts because, let’s face it, you have to be earning six figures to be able to afford pine nuts.

-I used dried cranberries instead of dried currants because my cabinets are already overflowing with dried fruit varieties.

-I omitted the red bell pepper because I accidentally ate it for lunch.

-I added chickpeas for protein.

It should come as no surprise that a dish with dried fruit and nuts struck my fancy. That being said, there wasn’t a whole lot of interest in the flavor department for this dish. Next time I think I would add some sort of spices, or at least salt and pepper.

  1. Oh yes, many a change in store for me… last day of classes and last paper due on the 25th, last exam on the 28th, graduation on the 7th, not moving home for the summer and looking for a real job… ACK ok anyways, I’m excited to meet your new pup!

  4. I’m so jealous you end classes on at the end of April- i’m envious! I gotta give it to you though- you’ve worked hard! :) Ugh, organic chem- i still have to take it! May be emailing you quite a bit :)

  5. YEAH – no more organic! i think i threw myself a party when i finished that, too :)

    i used that pfitz program more than once when recovering from injury – it’s great!!

  6. Big events that I am expecting is the wedding and travel around the world ! :)

  7. The Container Store (one of your favorites, and mine too) has a product called the Salad Shaker, which is a plastic salad container with a dressing container on the top. You fill it with dressing and close it up, but don’t pop the container until you’re ready to eat. Then you get to shake up your salad to mix the dressing and it is fresh, not soggy. It comes in both a bowl shape and a taller one. Hope that helps! (I own 3…)

  8. Where in SC are you going to pick up your baby from? So much fun :) And I hope the running goes well. I want to try that Trader Joe’s Soy Sesame Dressing. I will have to put it on my next TJs list. Mango in a salad just sounds awesome.

  9. I made the most flavourful couscous dish for dinner tonight! I cooked 1/3 c of dry whole-wheat couscous in a mini can (~2/3 c) of lite coconut milk, fluffed it up, tossed it with some green onions, roasted cashews, seared tofu (marinated in Braggs & chili peppers), steamed snap peas, and voila! So if you’re looking for flavour, try this one out – the coconut milk makes it so eeelish :)

  10. On my list of exciting things happening in the next few weeks: finishing classes on May 10, graduation on May 14, and taking my NBRC credentialing exams immediately after that! Exciting but stressful at the same time. :)
