Two Years and Change

March 9th is a date that bears much significance for me…yet I failed to acknowledge it this year. Indeed, I must have been too distracted by the likes of Jaws and Beetle Juice to remember my blogiversary. Today marks the two-year-and-one-month anniversary of The Broccoli Hut…so I guess you could say I’ve been blogging for “two years and change.”

Speaking of change (nice segue, right?), this blogiversary has induced me to reflect how my life has evolved over the past two years. If any of you are veteran readers, you’ve witnessed the emotional and developmental adventure that is my college experience. You’ve seen the great joys, the disappointments, and the culinary triumphs, of course. All those experiences were made so much richer by the comments you provided on a daily basis. For that I thank you.

When I started my blog on a whim during spring break of my sophomore year, I never expected to find such a life-changing hobby; I never expected to find so many like-minded health nuts with whom I could share and exchange thoughts on food, nutrition, fitness…and life. I hope to continue blogging, through whatever changes the future may hold for me.

How have you changed within the past two years?

Alright, alright—enough about me…let’s get onto the grub!

Anytime there’s a package of tempeh bacon sitting in the fridge, I must have an Elvis sandwich. Don’t knock it ‘til you try it, folks.

Spring brings me joy for several reasons: sunshine, blooming flowers…and fresh asparagus, of course. For lunch, I decided to make an asparagus-centric Salad Lady recipe—Asparagus Tofu Salad.

Upon returning from class, I kicked off the weekend with some blog reading (yeehaw!), then cobbled together a simple dinner. For the BBQ sauce, I used half Annie’s bottle BBQ sauce and half plain tomato sauce in an effort to cut down on sugar.

Now I am off to the grand opening of a new restaurant on campus with Allie. Bring on the free samples!

  2. Wow, I had no idea you’d blogged for that long! That’s excellent. And 2 years?! I think I’ve changed a ton just in 10 months. It makes me wonder how I’ll think down the road…
    I have some tempeh bacon in the fridge and now I have plenty of ideas :-)

    I’m really excited to just be getting into the blogging thing and it is thanks to your blog and all the other inspirational writers out there.
    I remember I started reading during your alphabet of oats and was so thrilled to find that other people were as crazy about oatmeal as I am!
    So I look forward to more great foodie ideas, positive Caroline changes, and trying the Elvis sandwich! Where do you get tempeh bacon?? I must track this down.

  15. Aw! I loved the recap! I don’t know if I followed every post since the first but I remember many! I wish I would have attended the RDU meet up!

    I also should have attended the summit, but then again, it wasn’t the best time for me ( I think I started a new job and had my wisdom teeth out). Maybe this year!

    Two years of remarkable food writing and gorgeous photos. And, in your new profile photo, you look so happy. I don’t think you’ll be a health and food writer someday. You already do food writing in a way few others do. All you need now is an “income stream” for all of that talent.

  21. Aww happy belated blogiversary!

    Although i’m slightly “knockin’” on that elvis sandwich….it just seems so odd (?!!?), I bet that it’s incredibly tasty! I mean, helllllooo tempeh, bananas, bread and peanut butter are all a part of my foodie vocabulary–I may just have to try them together, once I muster up the courage and get some ingredients together this summer! I also wanna try that pb & j/tempeh combo….again, i’m nervous but will definitely make the effort soon enough :)
