Unexpected Endurance
Good afternoon, bloggies! I am excited to report that my sorority responsibilities ended early today, so I found myself with an extra window of time. What better way to spend my free afternoon than by checking in with my favorite foodies? Aside from my pleasantly short recruitment activities, I am also in a good mood as a result of a kick-ass workout this morning. I set my PR for distance: 7.71 miles. Yeehaw! Ironically enough, I have been getting minimal amounts of sleep lately—I’ve gotten a total of 10 hours over the past two nights, thanks to wanting to get in some quality time with Seth:) Anyway, perhaps I should sleep fewer hours the next time I want a little endurance? Nah.
Here’s what I’ve managed to fuel myself with recently:
Monday
Ever wonder what kind of meals you would make if you had absolutely no fresh food? Look below to find out. Must. Get. Groceries.
Tuesday
Before heading out to another day of sisterhood, I whipped up some of Katie’s Banana Blender Cereal. Although I didn’t use my coconutty variation this time, it was darn tasty, and filling too.
We were given a quick lunch break, so I picked up a salad on campus, featuring cranberries and walnuts. Thanks to my rather light lunch, I returned home to satisfy my tummy with some roasted red pepper hummus and pita.
I think a nap is on the agenda now—I am one pooped chica. Have a great evening, everyone.

Hello and welcome! I have created this blog for people who love food, especially healthful, vegetarian food.
I have just graduated from Duke University with degrees in English and psychology. I plan to pursue a master's degree in nutrition starting in Fall 2010. Ideally, I would like to combine my love of food and the written word someday as a health writer.

Haha I’m stressing out about the grocery shopping already!!! I’ve been spoiled with a stocked fridge and produce at home wah!
Congrats on the PR! That’s awesome
congrats on your PR! lol that isn’t the lamest picture ever, yesterday i posted a pic of sliced cucumbers in a paper container, taken with my iPhone in the shittiest light. yeah..
You better take a nap – yowza!!
Had to laugh – I’ve had too many lame pictures to mention!!
With every post you write, I seem to think more and more that we are long-lost sisters (wishful thinking?). I’m my most-hyper when I don’t get enough sleep too!
My longest run came on a day that I woke up at 3am. But I think it was actually the coffee (which I don’t normally drink) that made me so hyper, not the lack of sleep.
You have the cutest bowls… and the cutest sense of humor. I always smile at your posts
.
Now go take a nap!!
get chur nap on girl! i’m feeling so lazy tonight i don’t even know what i want to make for dinner! hmm
congrats on the pr though thats so exciting
Way to go on the run! Maybe you’re just running on adrenaline and not much else and it spilled over into your run. I’ve had some pretty damn good hungover workouts, won’t lie. You can just zone out.
Congrats on your PR! I wish we had salads like that on campus. I’ve been brown-bagging it
enjoy your nap
sounds like a great run!
Congrats on the run! That rocks
For someone who needs to grocery shop, I don’t think you’ve hit rock bottom just yet! You let us know when you’re eating the mustard straight from the jar–THEN you have problems.
Banana blender cereal?? That looks awesome!
Congrats on your personal distance record! Hope that your nap was refreshing, though. Glad you can spend time with the boy.
Actually your meal doesn’t look too bad for being in need of grocery shopping…haha.
I’m definitely reaching the stage of needing some fresh food in the house, myself!
Great run!
I’d say you did a pretty good job with no fresh food! And CONGRATS on the new PR….
I’ve had pretty good runs when I’m tired, too. I think it puts you in sort of a “zone” and your brain shuts off which helps you run better. Who knows!
aw, none of your pictures is lame! You sure did a good job with meals considering an empty pantry!
“just like pudding” mmmm omg that looks SO good!
cranberries and walnuts on salad are the best toppers!
congrats on your new PR thats so exciting!!
Congrats on the new PR – 7.71 is AWESOME!
Way to go on the PR, how do you measure your distance by the way, do you have a special watch or something?
Love xoxo
