Valentine’s I.O.U.

So I may be a bad girlfriend. Due to my big organic chemistry test today, I spent the entirety of this past weekend studying, meaning Valentine’s plans went by the wayside. I picked out Seth’s Valentine’s card weeks ago…as for the menu planning and cooking I meant to do? Not so much.

However, I have promised an “I.O.U,” of sorts, in that I have a celebratory meal planned for this coming weekend. Stay tuned for the foodie deets:)

How are you spending your Valentine’s Day? I plan on spending the remainder of the evening with revising a paper and munching pink and red M&Ms.

Onto the eats.

I made a nod to the holiday this morning with chocolate-covered strawberries…in oatmeal form. Truthfully, it was just like my Almond Joy Oatmeal, except I substituted freeze-dried strawberries for the almonds.

In between classes, I munched on Tomato-Basil Hummus.

Once home from my looong day, I resorted to my friend Annie for dinner.

  3. I hope you test went well. I like the idea of putting edamame in the mac and cheese! I have a late class tonight so I might just try that when I get home.

  4. Good idea to use edamame to bump up the protein! :) I love Annie’s… It’s almost like healthy boxed mac ‘n’ cheese~. I spent my Valentine’s Day… not doing anything special in particular! Lame? I don’t know, but I don’t like Hallmark holidays like Valentine’s Day so big deal… People should be open to telling their loved ones “I love you” all year round! :D

    Have you written your organic chem test already then?! How was it? All the best wishes for ya, and hope the weekend comes faster – so you can get some relaxation time in!

  5. Its hard to celebrate Valentine’s day when its during the week!! I’m sure Seth totally understands. Annie’s mac n cheese! So good for a quick dinner. Josh and I did a little celebrating ourselves, but nothing crazy! He did get me one of my favorite candies though (will post about it tomorrow morning ;) ).
