Waffles for Breakfast and Brinner
When I was growing up, one of my absolute favorite meals was breakfast for dinner—”brinner,” if you will. Why?
a) I got to drink the juice from the canned pears my mom always served, and
b) more importantly, brinner almost always revolved around homemade waffles.
It’s no wonder my mom included them in regular dinner-time rotation—they’re fast, cheap, and always crowd-pleasing.
Recently, I’ve been putting my waffle iron to good use and dreaming up new variations on the classic.![]()
As you can see, I really enjoy coconut butter as an alternative to maple syrup—it tastes quite sweet to me (although it contains less than 1g of sugar per tablespoon). Plus, I’m still hoping that my beloved coconut is actually a health food. Fresh fruit and nuts are also included in my favorite ways to jazz up my waffles.

Yumm! Now I just want waffles
I used to LOVE “brinner” when I was growing up.
My mom would always make my sister and I vegetarian sausage, eggs, and waffles or toast. So simple but it was so delicious.
Now I’m craving waffles…Yum!

I love brinner, too! I’ve actually never had coconut butter before, believe it or not. These are great waffle combinations. My favorite topping growing up was oddly butter and grape jelly. Nowadays, I like the occasional chocolate chip, but my favorite topping – and word, for that matter – are those bloobs.

Coconut butter is worth a try! It’s a tad expensive to buy, but you can make it yourself by whirring up unsweetened coconut flakes in a food processor (or your super-awesome VitaMix).
When I was little, my mom would give me pear juice to drink too! I didnt like apple juice and we never really had orange juice but my sister and I loved pears and my mom would give me the juice in my sippy cup. I thought I was the only one!
My favorite waffles are definitely pumpkin with cinnamon

Haha! I thought I was the only one too! My sister and I actually used to fight over who got to drink the pear juice.
If you have a good pumpkin waffle recipe, I’d love to see it–my waffle failures ALWAYS happen when I add pumpkin to the recipe. The extra moisture always throws off the proportions of my standard recipe.

However, I read this: “I got to drink the juice from the canned pears”…..as “canned peas”, and was confused for a few minutes. Maybe I shouldnt watch a movie, hang with the Boy, and read blogs all at the same time…while sipping on adult beverages. LOL

Reminds me of the Scrubs epeisode in which JD and Turk go crazy over brinner. With good reason, it’s my favorite meal too!!
I am obsessed with coconut butter too…so yummy!
And the waffles all sound extraordinary. I’m surprised I don’t make them more often.
This post made me want to go out and buy a waffle maker!!! I’m with you on the coconut oil too, it’s delicious and adds so much more flavor than just butter!
