Wedding Bells

Since my last re-cap, I got the opportunity to do one of my favorite things–attend a wedding! My sister’s good friend from high school and college got married on Saturday, and she was kind enough to invite my mother and me as well. The bride and groom lean toward veganism as well, so I sent them Vegan Cupcakes Take over the World as a wedding gift:) Anyway, it was a beautiful summer soiree. Here are a few pictures from the evening:

Onto the food!

Saturday

These pancakes were inspired by the Pear-Hazelnut Pancakes from ED&BV. I used my usual banana pancake recipe and added in hazelnut butter and freeze-dried pears. I am having so much experimenting with pancake mix-ins…what are your favorites?

Yet another ED&BV creation…another success. I used these white sweet potatoes from the farmers’ market. The farmer told me that they are sweeter than the traditional sweet potato–SOLD! This was a fantastic dish, and it paired quite well with the pumpkin seed butter.

By the time I returned from the wedding, I was hungry again. I made some GC-inspired refried beans…perfect quick meal.

This bowl of oat bran didn’t turn the magical hue of blue that I was hoping for–instead it resembles some sort chunky cement. Oh well, it still tasted good!

Another ED&BV creation for dinner. I didn’t have any smoked tofu, as is required in the recipe, but I substituted some leftover chickpeas and a few drops of liquid smoke. The Cacao Bliss truly lives up to its name–it smells and tastes just like a Samoa cookie! This would be the perfect addition to one of my Girl Scout bowls of oatmeal

I was lucky enough to get a ticket to the Healthy Living Summit in August! Who else will be there? Also, anyone have any good restaurant recommendations for the Boston area?

Off to finish watching TNFNS. Ciao!

  1. Beautiful dress, couples, food (especially the cake and your pancakes!!), and event/celebration!!

Restaurants in Boston that are worth checking out, for sure = Legal Seafoods (trust me!!), and Grezzo.

TNFNS = I’m still underwhelmed by this season.

  2. I have never been to a wedding! Well, actually, I’ve been to one..but I was a baby and I don’t remember it. I was the ring bearer!!

  3. those little chocolate airplanes are so cute! and i know…cacao bliss is the best invention ever. i could probably eat the whole little jar with a spoon as if were pudding…but that would not speak well for my self-control. hah! actually, a little bit goes such a long way with that stuff. so just a spoonful is really satisfying. it looks great on the yogurt!

  4. Love the wedding outfit, the beautiful cakes and couples, and fruit! Gotta love ED&BV—I’ve been meaning to make more recipes from that book. I like my pancakes simple with nothing in it, but topped with any type of fruit (especially berries). I do like buttermilk pancakes, though, which have more flavor. I use a little vinegar + almond/hemp/soy milk since I have dairy sensitivities, and it taste just as great as regular buttermilk pancakes. mmmm.

  5. you look SOO cute!!!!

what a beautiful wedding!!!! LOVE the cake n the fruit spread! and those little planes are SOOO cute– my dad flys planes lol he would love that :)

soo jealous you got a ticket to the healthy living summit!!!!! i LIVE in boston and i didn’t even get a ticket in time!

there are LOTS of great restaurants in the city!!!! i LOVE grezzo– its a vegan high raw restaurant in the north end! YUMMY! xoxoxox

  6. Carmen in the north end is my fav Italian place!!!! If you want Indian go to Indian Quality, and for a super good, affordable lunch you def have to go to Piattini on Newbury St. The prices are great and food is even better! I didn’t get a ticket to the Summit, but it would be awesome to somehow still meet you! Lets plan!

  7. that cake is really gorgeous!

  9. P.S. Yay for the Summit. Can’t wait to meet you!

  10. What a gorgeous wedding! Your pancakes are too, by the way. The crispy pears are $10 a bag at my Whole Foods, so I’ve never bought them. I hope I can find them cheaper somewhere.

  11. The last time I went to a wedding I was 6, so i don’t remember much of it. I wish I had older sisters (or even just one… or even an older brother…) so I could get to experience some weddings already, haha!

You look beautiful in your dress :D

  12. Caroline,

  19. All your weekend eats look delicious! AND I love those shoes!

One of my favorite restaurants in Boston is Artu, on Charles St. in Beacon Hill. It is really small, if you blink you will miss it. They don’t take reservations, but I have not had trouble getting a table before 8pm. Amazing italian food with a cozy setting.

  20. Looks like a beautiful wedding!

All the food in this post looks so good that I can’t pick just one to comment on. :)

Just a question- do you count calories? or do you know how much you eat a day? I think it’s interesting how everyone can eat different amounts.. I’m still learning how much I need!
