Weekend Refresher

Good afternoon, all! I don’t typically post on Saturdays, but I just couldn’t wait to share a recipe with you that might add a little fun to your Labor Day celebrations: Ellie’s Watermelon, Lime, & Mint Granita.

My tweak:

-The recipe calls for 1/3 cup sugar, but I used 2 T sugar with a few packets of Truvia.

In addition to the promise of refreshing watermelon, this recipe also presented a perfect opportunity to use my new food processor.

Ellie informs me to “discard of the solids,” but I tasted the pulp after pressing it through a sieve…and it still tasted darn good. I saved mine for a use yet to be determined…Maybe watermelon gazpacho? A cocktail? Who knows!

Once I put the mixture in the freezer, it required “fluffing” every 20-30 minutes in order to achieve that lovely granita texture. It was a little tedious, but the end result was quite delicious.

    I made this today but turned into a sorbet :-)
    Blended watermelon + lime juice + mint and put in my ice cream maker = instant deliciousness!!
    Omg, it was so good! I didn’t measure anything but got about 3 cups of blended watermelon (looking from the side of my blender), then added juice from 1/2 lime and some mint leaves, blended again and froze. It was the best sorbet ever!! The watermelon was so sweet I didn’t even need to add any sugar. Perfect and so refreshing for a summer afternoon!
    Watermelon is my favorite food and I loved it with the lime juice, which totally brightened up and intensified the flavor of the melon even more!

  9. That sounds very similar to the drink I made on the weekend – I just blended up watermelon, mint, lime, aloe juice, and a splash of vodka. I bet the granita would be great!
