Weekend Routine

Since the beginning of the new year, I’ve fallen into a weekend routine of wildly exciting activities, including:

  • Ke$ha-tastic elliptical sessions at the gym

  • cheese-filled omelets

  • multiple episodes of Healthy Appetite with Ellie Krieger

  • Dinner at Panera

Whew. Almost too much excitement for one weekend, no? Contrary to appearances, I am not 85 years old.

Do you fall into a weekend routine? What does your usual agenda include?

Amidst my weekend routine, I also gulped down some good eats.

Saturday

I cracked open another jar of Futter’s yesterday morning for a some almond-y banana-bloob oat bran.

Due to a late breakfast and various weekend errands, I ate a small meal around 5PM. I guess you can call it lunch. Quick poll—favorite kind of jam on PB & J? Cherry all the way!

Staying true to our lazy-Saturday tradition, Seth and I walked around the corner to Panera for dinner…and I ordered the exact same thing that I did last week. How un-foodie-like of me.

I saved room for dessert, however, because I knew we had Ellie’s warm Pear Ginger Crumble waiting for us.

My tweaks:

-Ellie doesn’t specify what kind of pears to use in her recipe, so I used Bosc because they were on sale.

-I failed to note that the recipe requires that the pears be peeled prior to baking. Oops. Oh well—call it a rustic (fibrous) crumble.

-I used an 8X6 pan instead of 8X8 because I apparently don’t have an 8X8 pan. As you can see, the baking pan was overflowing as a result!

This crumble was fantastic! I’ll admit, I snuck a taste of the crumble topping prior to baking, and it was amazing! Brown sugar is a magical thing. I topped mine with some plain Greek yogurt, but you could also try vanilla frozen yogurt.

Sunday

Cheese-filled omelet, coming right up.

For lunch, I made a wrap featuring the magical trio of hummus, salsa, and avocado. Yum.

As for the evening meal, I improvised a ratatouille using a huge eggplant that has been lurking in my fridge.

Alright, I am off to organize for another week!

  9. I’ve never claimed to be too fun and cool, but your weekend sounds wonderful! How is your hip feeling?

I am so totally a creature of habit – when I find a meal that I like at a restaurant that is healthy and vegetarian, I usually every time (case in point: Noodles & Co Med Salad)!

  10. Your ratatouille looks delicious- love the addition of white beans! Will you post the recipe in the near future?

I also love weekend routines (except when laundry is inevitably involved for me) because it’s nice to have things to look forward to.
