Weeknight Dinner Date

Last night, as Seth and I were chomping away on copious amounts of cauliflower (see last night’s curry), Seth suggested that perhaps the occasions on which I prepare dinner for the two of us become more frequent. He proposed that rather than restricting these meals together to weekends only, we plan for a “dinner date” during the workweek.

I loved the idea, of course. After all, I get pretty tired of scaling all my recipes down for one serving. With Seth around for mealtime, I know I can make a recipe that serves four, and he’ll take care of the leftovers:)

How often do you prepare a meal for your significant other? Is your eating schedule during the week significantly different from your weekend pattern?

I ate all my meals solo today, but I enjoyed them nonetheless.

I couldn’t wait to bust into my blackberry stash this morning for breakfast. Blackberries are totally my favorite berry…what’s yours?

Last week’s air travel required a magazine or two, and I found a particularly tasty-looking salad recipe from EDWRR, Moroccan Carrot Chickpea Salad. I had intended to make it fancy with my Spiralizer, but my carrots were too skinny. Boo. At least the salad tasted good—ground coriander is definitely under-utilized in my kitchen.

Tonight’s meal was Ellie’s Stuffed Turkey Burgers.

My tweak:

-I used Harmony Valley hamburger mix instead of ground turkey.

These burgers were completely delicious. But then again, how can you go wrong with roasted red peppers and mozzarella? I’ve never made a “stuffed” burger before, and I think it might become a new infatuation—I’m having visions of caramelized onions, feta, tempeh bacon, mushrooms….the possibilities are endless!

  1. well…if I had a significant other… maybe we’d be on a schedule ;) haha but I have really random eating pattern in my single life! Tonight I went out with a big group of friends. Sometimes I like to just cook something for myself. Sometimes I have people over! But I definitely go out moreon the weekend!

  2. Blackberries are awesome, but I think I couldn´t choose my fave ones among berries…how could I amit strawberries, raspberries..any berries? :) Such difficult questions you ask! :)
    I think I eat pretty same no matter what part of the week it is..and I alway make meals only for me (because there are no other options:), only sometimes when I have frinds coming over, I cook something more “chic” :)

  3. I don’t have a significant other, but my mom and I prepare dinner for my family every evening together! Its a fun new tradition. During the school year, my weekend eats were definately different than my weekly packed lunches, but now that its SUMMER, all my eats are more weekend-ish. I love having access to a stove, oven, microwave, fridge, freezer, and blender all day. Its so lovely.

    I cook for my husband only on weekends too and eat mostly alone during e week. I like that!

  6. I don’t have a significant other, but I hope that whoever I end up with one day will eat similarly to the way I currently eat. :)
