Good evening, all! I hope those of you in the US had a pleasant holiday weekend. I used the extra time to do a little shopping (so. many. sales.) and pay a bit more attention to my weekly meal plan. For the first time in a long while, I’m actually excited about the meals I’ll be preparing this week—in recent weeks, it’s been the same old dishes on repeat. It’s amazing what a little recipe searching (a.k.a. Pinterest-surfing) can do for your enthusiasm for cooking!
So here’s what we’re eating this week:
flatbread pizza with mozzarellla + rainbow peppers. Admittedly, this dish is something we eat quite often. But, it’s easy and we’re not tired of it yet. Win-win!
tacos with black beans, cilantro, salsa, + Greek yogurt. I searched everywhere at the grocery store for some refried beans that didn’t have absurd amounts of sodium but to no avail. I miss Harris Teeter already…
whole wheat pasta w. veggies, lentils, + tomato sauce. I was on a lentil kick for a while last spring and early summer but got tired of them for a while. Fortunately, my love for this cheap and easy protein has returned!
salad with salmon, dijon dressing, romaine, peppers, corn, + avocado. Entree salads aren’t just for my lunchbox anymore—Seth enjoys a veggie-ful meal every now and then too!
chicken burgers + fruit salad. I’ve recently made the decision to try eating (sustainably raised) chicken again. I am trying to eat more intuitively these days, and I feel like my dietary restrictions are holding me back. I don’t see myself eating chicken every day or in large portions, but I would like to give myself the option of eating it if I crave it. I’m tired of dietary labels. Make sense?
grilled veggie kebabs + sweet potato fries. Seth and I are totally psyched to have an outdoor grill at our new house, and we try to use it every weekend. We made some shrimp and veggie kebabs last weekend that were super good, so I’m hoping that we can recreate that magic (sans shrimp) this time.
