When I Grow Up
Despite my apparent enthusiasm for food, I did not emerge from the womb wanting to be a nutritionist. I’ve wanted to be everything from a journalist to a cook at Eat N Park (any Pittsburgh readers out there?). I also vividly recall a two-to-three-year period in which I aspired to be a wedding planner. Indeed, years before shows like Say Yes to the Dress and Whose Wedding Is It Anyway? even existed, I was in my basement with my dad’s old briefcase and my mom’s high heels, pretending to be a wedding planner. Something about the high level of organization required for the whole occasion appealed to me. Plus, to a chubby 9-year-old with a serious cowlick, the elegance associated with weddings was like something out of a storybook.
Anyway, considering my appreciation for all things wedding-related, it should come as no surprise that I jumped at the chance to accompany my mom (again) to a friend’s wedding. I also happen to enjoy having an excuse to dress up:)
As a child, what did you want to be when you grew up? How has that changed over the years?
In addition to wedding-flouncing, I did manage to eat a few tasty meals this weekend.
Saturday
Remember last summer’s infatuation with Rachel’s flavored cottage cheese? I can’t seem to find them anywhere—I fear they have stopped making them. Tragic, yes, but at least I can attempt to recreate Rachel’s flavors at home.
One of my favorite ways to use up leftover chili is to pour it over a baked sweet potato. (It’s also good with sweet potato fries).
After the wedding, my mom headed down to the lake house to meet my dad, Lea, and Ryan. We stopped at Panera on the way. I was still way hungry after I finished eating.
Yet again, it was a protein deficient meal.
The cilantro hummus was dang tasty though.
Sunday
It was slim pickins’ this morning at the lake. I did happen to find a carton of egg whites, frozen spinach, and a string cheese. Voila! Breakfast.
Amy came to the rescue for lunch, providing the “meat” for a burger wrap.
Once back in Birmingham, I whipped up a quick veggie soup and grilled hummus sandwich for dunkage.
Alright, off to prepare for the season finale of Breaking Bad. Ciao!

LOL I’ve eaten at many an Eat N Park during college! I miss their smiley cookies.
When I was younger, I wanted to be an engineer like my parents, or a famous singer (we had our own spice Girls group), then a vet, a horse trainer, a dentist, a doctor, a pharmacist..and now a private nutrition counselor. I think I’m stickin with that last one
That sweet potato and chili looks great! I usually eat them with cinnamon & maple syrup but lately I’ve been getting into savory sweet potatoes so the chili idea rocks
I wanted to be a pediatrician or a writer…and now I’m kind of both. You and your mom are gorgeous!
Hmmm…the only things that come to mind as things I used to want to be when I grow up (grew up?) were a vet, chef, and…uh…that’s about it. I’m sure there were more, but they were probably short lived.
Given how hopelessly easy it is to eat the recommended amount of protein daily and within each meal as a plant-based eater, I’m always irked when restaurants make it hard for me. Beans, high quality grains or grain products, and nuts/seeds — to say nothing of a soy option — should be mandatory!
I wanted to be a teacher or a lawyer when I was growing up. I started college as an education major and then quickly left that.
I have a sweet potato to try the sweet potato and chili combo – cannot wait!

Haha, when I was young I was ambitious enough to want to be a cancer researcher? Then a ballerina (don’t we all), then a writer. Now, on bad days I just wanna take a degree in Beach Bum-ism
…but ideally, I’d like to work in journalism!

When I was little…I wanted to be a dancer..or dance teacher
When I was a little girl, I wanted to be a movie star or an Olympic swimmer (I was very sad to learn that the latter was not actually a job).
I will definitely have to top a sweet potato with chili. I’m always looking for savory, non-dairy baked sweet potato toppings. I don’t like the sugary ones at all.

SUPER sad, i’ve looked at ALL my health food stores– Whole Foods (of coarse), New Leaf, TJs and more….. farewell, Rachel, I suppose. Totally let me know if you find her again, totally wanted to meet her haha
By the way….i’d LOVE a recipe of the veggie chili you mad, looks fab, even if it is simple, cuz’ simple is the way I go

Chili topped sweet potatoes are really good. Growing up I wanted to be a vet, police officer, and teacher. Now I am going to school to became a pastry chef.

When I was younger, I really wanted to be a professional basketball player. I was obsessed with the NBA and WNBA – so many jerseys! I went to three basketball camps every summer.
But I quickly realized that I was not aggressive enough! I could shoot the ball, but rebounding was a big mess
Good thing I realized that!
Then I wanted to be a pro golfer. Still kind of wish that had happened!
