Winding Down

After this week of craziness, both in terms of schoolwork and my personal life, I am finally winding down. Today involved far more napping and far less studying than I had planned. As a result, my food life has continued to be pretty basic but satisfying, nonetheless. Check out the goods:

Saturday

I celebrated the weekend with a batch of vegan banana pancakes. I can’t believe I haven’t made these all semester long!

Another all-time fave of Caroline’s? Scrambled tofu, of course.

For dinner, Seth and I decided to hit up an on-campus eatery before heading out to the mall. We went to The Loop, where I ordered my usual Black Bean Burger. No pics this time, but it resembled this one from the past:

Sunday

Continuing with the classic theme, I made a big pot of PB&J oat bran for breakfast this morning.

I made some mock tuna for lunch, which was accompanied by my beloved celery and salsa combo, plus a few apple slices.

For those of you who are interested in my recent romantic adventures, I am excited to say that I am officially in my first relationship. If some of you will recall, I’ve been waiting for this to happen for a while, but I think it was worth the wait:)

  31. Aww, congratulations! What a sweet story. I was the same way.. I had never had a boyfriend or a kiss and was 19, a junior in college. I honestly thought I would never meet anyone and that love was just a myth. Then I met the love of my life in French class one day this past January and since then I have been the happiest I’ve ever been! I wish you & your guy great luck & happiness.

  32. hahahah oh my gosh- the cat in the vest seriously CRACKS me up. Thats awesome. Glad you got some relaxing in after all the craziness. how good are those sesame cashews? I picked some up from TJs when we were in Nashville. Josh and I are in love with them!

  34. I LOVE Togo’s vest! Where on earth did he get it? My mom is actually knitting a sweater for our cat. We find that he’s way too big for the store-bought cat clothes, he might need to move up to small-dog-wear.
