I never thought three words could sound sweeter. Indeed, when Misti the GPS announced “you have arrived,” I felt like leaping for joy, despite the fact that the clock read 3:30 AM, and I had just spent 12+ hours in the car. Nonetheless, Seth and I arrived in Massachusetts safe and sound early this morning.

All that time in the car has proved to be worthwhile, as the time we have spent here has been relaxing and full of delicious food. Let’s take a look, shall we?

Tuesday

Before heading to lab, I prepared a batch of delicious scrambled tofu.

Although I was tempted to eat peanut brittle (this week’s lab recipe) for lunch, I balanced out the sugar with a Greek salad.

Dinner was a packed PB & J for the car ride.

Wednesday

I was delighted to discover an abundance of B-Hut-friendly foods in the refrigerator this morning. As an added bonus, the morning light in Seth’s family’s kitchen is phenomenal for food photography.

For lunch, I had a faux turkey sandwich on rye with mustard.

The centerpiece for dinner was a rosemary-spiked butternut squash-white bean stew. You better believe I’m getting that recipe before I leave this weekend!

And for dessert, I am contemplating opening up a few packages of these:

Yes, my search for Reese’s Pieces from a few months ago has now ended, thanks to the generosity of Seth’s parents:)

Alright, home movies featuring 3-year old Seth beckon for my attention.
